Serenity Sunday

We sang at Mass this morning.  I think we did alright considering practice was canceled this week due to weather. 


We got home and Frank went out to take care of the pigs.  The dogs accompanied him and when they all came in we looked around and there was blood everywhere...Fiona had slice her foot open and it was bleeding like crazy.  We have it all wrapped up nice and pretty now but she is not so sure that she is happy about it.

Now Frank is making us breakfast and it smells delicious in here.  Bacon, Eggs and his Famous Breakfast Potatoes.
 
 
First he takes the potatoes and pierces them with a fork.
He covers them partially with water and puts them in the microwave.
He cooks them on high heat for 20 minutes, turning the potatoes after 10 minutes.
 
 
Let potatoes cool enough that you can handle them.
Cut into slices and fry in butter with finely diced onion.
Until brown and crispy.

Breakfast Potatoes
 
2 potatoes (Frank uses 2/3 of a large potato for each person, today we were feeding 3)
1 T. finely diced onions.
2 T. butter
salt and pepper to taste
 
Place potatoes in a microwave safe baking dish and cover halfway with water.  Cook on high heat for 10 minutes.  Turn potatoes over so other side is covered in water.  Cook on high heat for another 10 minutes.  Let potatoes cool enough so that you can handle them and slice into 1/4" slices.   They may fall apart.  Heat 2 T. butter in a large skillet.  Add Onion and Potato and fry, turning occasionally until brown and crispy.
