Pizza Bites and the Weekly Menu

What are your plans for this weekend?  Our weekend is pretty clear so I'm thinking that a Family Game Night might be a distinct possibility. We love games in this family and we have a plethora of them.  Games for just two people to Games for a crowd.

Of course one of the best things about Family Game Night is the snacks....Like these easy, peasy, and delicious pizza bites.

There are certain things I like to have on hand in the refrigerator and pantry.  You can always find several types of cheeses, nuts, dried fruits, and crackers for when unexpected guests or snack cravings hit. 

I also like to keep the makings for pizza on hand for the same reason. Refrigerated pizza dough can be used for a quick flatbread, bread sticks, crust for a casserole, or these simple and fun pizza bites.  

Mozzarella Pearls easily adorn salads or charcuterie boards.  They can be eaten as they are, marinated in olive oil and herbs, melted onto bread or crackers, or stuffed into these pizza bites. 

And we always have marinara sauce in the cupboard, either my canned Farmstand Marinara or store-bought.

With a few simple ingredients and half an hour you can feed a gang of hungry gamers or supply a snack when there's a game on tv to watch.

Whatever you do this weekend I hope that it brings you comfort and joy.  We not only have a quiet weekend but the entire week is pretty clear.  Here is what we'll be eating......

Pizza Bites

Pizza Bites

A few simple ingredients and a few minutes of your time provide for a delicious and fun snack for family and friends.
Prep time: 10 MinCook time: 15 MinTotal time: 25 Min

Ingredients

  • 1 lb. refrigerated pizza dough
  • 1 egg
  • 32 Mozzarella Pearls
  • 1/2 stick butter, melted
  • 1/2 c. Parmesan cheese
  • 1 t. dried basil
  • 1 T. chopped parsley
  • Marinara sauce for serving

Instructions

  1. Divide the dough into 32 pieces. Wrap each piece around aa Mozzarella pearl and place seam-side down onto a baking sheet covered with parchment or a silicone mat.
  2. Whisk the egg with a little water and brush over the dough. Bake in a preheated 450* oven for 15 minutes, until golden brown.
  3. While pizza bites are baking, combine the butter, Parmesan cheese, basil and parsley.
  4. Remove the pizza bites from the oven and immediately brush them with the butter mixture.
  5. Plate and serve with Marinara or Pizza sauce for dipping.
