Savory Breakfast Muffins

2021 was an extremely tough year for me.  My husband suffered terrible medical problems at the beginning of the year and we thought we were going to lose him. God blessed us by restoring him to full health but I lost many others and it hit me hard.  I was very stressed and very depressed.  I stopped taking care of myself and had to force myself to function each and every day.

In November, right before Thanksgiving, I decided that enough was enough and that I needed to concentrate more on my blessings and the wonderful things for which I needed to be grateful.  I thanked God for my husband's restored health, my children's many accomplishments and successes, the people still in my life who provide me with so much love and support and I took leave of my pity party.

I concentrated on nourishing myself when I was hungry instead of just mindlessly eating whatever was in front of me.  I returned to adding movement into each day instead of just sitting on my chair, dulling my mind with  alcohol.  I began spending time with God again instead of pushing him away in anger for the losses I couldn't understand.

Slowly I have been being restored.  I have more energy.  I am strong.  I still cry (a lot) but I have found my laughter again too.  And I make sure to enjoy time with the people I love and to not take their presence in my life for granted.  

When I lost another dear friend right before Christmas I was in a better frame of mind and was better able to cope with that loss.  Life still goes on and death, as hard as it is,  is part of the life cycle.  I remind myself daily that, had I not had the love of these that I have lost, I wouldn't have the sadness and I wouldn't change having them in my life for anything in the world.

These muffins are from Eating Well.  They are made with white whole wheat flour and flavored with vegetables and lean meat with just a bit of cheese to make you feel like you are being indulgent.  They will nourish your body and soothe your soul at the same time.  THAT and a prayer of gratitude is a great way to start your day.

Savory Breakfast Muffins

These savory muffins are made to enjoy as a complete, nutritious breakfast but are just as delicious paired with a bowl of soup for lunch or dinner.

Ingredients

  • 1 1/2 c. white whole wheat flour
  • 1/2 T. baking powder
  • 1/4 t. baking soda
  • 5-6 grinds fresh black pepper
  • pinch of salt
  • 1 egg
  • 1/2 c. + 2 T. buttermilk
  • 1 1/2 T. olive oil
  • 1 T. butter, melted and cooled
  • 4 scallions, white and light green parts, thinly sliced
  • 1 1/2 oz. (2 slices) Canadian bacon, diced
  • 1/4 c. shredded Colby Jack cheese
  • 2 mini sweet peppers, seeded and diced

Instructions

  1. Combine the flour, baking powder, baking soda, pepper and salt in a bowl.
  2. Whisk together the eggs, buttermilk, oil and butter.
  3. Make a well in the center of the dry ingredients. Pour in the buttermilk mixture. Add the scallions, bacon, cheese and peppers. Use a wooden spoon or rubber spatula to mix until incorporated and just combined.
  4. Divide the batter between 6 standard muffin cups that have been treated with cooking spray. Bake in a preheated 400* oven for about 20 minutes, until golden brown and a skewer inserted removes cleanly.

  1. This has been a tough couple of years for a lot of us, full of loss and heartbreak but you have the right attitude, Wendy. Despite the devastating losses we do still have a lot to be thankful for. Thank you for this reminder. I love your savory muffins with bacon AND cheese!
