Apple Pumpkin Bread #BakingBloggers

Delicious warmly spiced pumpkin bread with studded with chunks of apple.  This bread is delicious for breakfast or a snack with your afternoon tea.

Apple Pumpkin Bread

I happened to have half a can of pumpkin puree left from when I made this Pumpkin Cornbread for dinner one evening.  I guess I could have used that for my quick bread recipe LOL.  However, when I think of tea breads I think of something a little fancier than a rustic cornbread, regardless of how delicious it was.

I also have a crisper drawer full of Michigan apples that we stock up on each fall so I wanted to incorporate them into this recipe.  The result was this scrumptious, moist and tender bread that we enjoyed for breakfast over the weekend.  I hope that you enjoy it as well.

Apple Pumpkin Bread

Apple Pumpkin Bread

Delicious warmly spiced pumpkin bread with studded with chunks of apple. This bread is delicious for breakfast or a snack with your afternoon tea.

Ingredients

  • 1 2/3 c. flour
  • 1 1/2 c. sugar
  • 1 t. baking soda
  • 1/4 t. baking powder
  • pinch of salt
  • 1/2 t. cinnamon
  • 1/2 t. nutmeg
  • 1/4 t. cloves
  • 3/4 c. canned pumpkin
  • 1/2 c. water
  • 2 eggs
  • 1/3 c. canola oil
  • 1 large apple, peeled, cored and chopped

Instructions

  1. In large bowl combine the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves.  Make a well in the center.
  2. Whisk together the pumpkin, oil, water and eggs.  Pour into the well and mix with a wooden spoon until dry ingredients are moistened. 
  3. Fold in the apples and pour batter into a 9x5" loaf pan that has been treated with baking spray.
  4. Bake in a preheated 325* oven for 1 1/2 hrs, until a skewer inserted into the middle removes cleanly.
  5. Let cool in pan for 10-15 minutes before turning onto a wire rack to cool completely.
