Taco Stuffed Shells and the Weekly Menu #OurFamilyTable

Enjoy Pasta next Taco Tuesday!!!  Jumbo shells filled with taco meat and tomatoes and then sprinkled with more tomatoes and shredded cheese.  A perfect combination.

I was very excited when I came across this recipe from Pillsbury.  The Angel Face and the Teen both love Tacos and they both love Spaghetti.  The Angel Face spends the night with us each Tuesday and I alternate having pasta one week and tacos or Mexican the following week. 



This recipe let's me give them both in one swoop. Score!!!  They loved it!!!  I loved it too.  It is easy to prepare, can be made ahead of time, and the recipe can easily be doubled or tripled. 


This was the case when I included this dish in the Mexican Fiesta we had when Marissa was confirmed earlier this month.  I made three pans of this pasta, a crockpot full of Chicken Fajitas and 3 pans of Chicken Enchiladas.  

While we were at the ceremony, my friend Karen, came over and put the pasta and the enchiladas into the oven so everything was ready when the guests arrived.


Kids and Adults both were crazy about this dish.  I had leftovers of every other dish except this one.  That tells you something.

You might want to include this dish when you make your Weekly Menu.  It is easy to make and very budget friendly.  

We went out to dinner last night as the Teen is on a church retreat so we celebrated Valentine's Day a day late.

This week is going to be spent getting ready for our Dive trip to Cozumel.  We leave next Saturday and I cannot wait!!  Here's what's on our menu this week.

Taco Stuffed Shells

Taco Stuffed Shells

Jumbo shells filled with taco meat and tomatoes and then sprinkled with more tomatoes and shredded cheese. A perfect combination.
prep time: 20 Mcook time: 30 Mtotal time: 50 M

ingredients:

  • 8 oz. jumbo pasta shells, cooked per package directions
  • 1 lb. ground beef
  • 4 T. taco seasoning mix
  • 1 (14 oz) can fire roasted crushed tomatoes
  • 2 c. shredded Colby Jack Cheese blend
  • 2 Plum tomatoes, diced

instructions:

How to cook Taco Stuffed Shells

  1. Cook ground beef in a skillet over med high heat, until browned and crumbly.  Drain, if necessary.  Stir in the tomatoes, half of the cheese and seasoning mix.  
  2. Fill each shell with about a Tablespoon of the meat mixture and place into a 9x13" baking dish.  Top the filled shells with the diced tomatoes and cheese.  
  3. Bake in a preheated 350* oven for 20-30 minutes, until heated through and the cheese is melted.
