Carrot Cake Cupcakes #SpringSweetsWeek


Delicious, tender carrot and pineapple laced crumb spiced with cinnamon, ginger and nutmeg.  Baked to perfection and covered with a pineapple cream cheese frosting before getting a sprinkle of Spring Sunshine.....

Monday #SpringSweetsWeek Recipes

The recipe that I am sharing with you today features decorating candies from Sprinkle Pop.  Sprinkle Pop sent me 3 packages of Easter/Spring Sprinkles.  I used some of each so you could get a look at all of them.


These cupcakes are perfect for Easter, Mother's Day or any Spring celebration.  They are easy and quick enough that you don't even need an occasion.  Serve them up one night just to surprise your family with a little homemade loving.


These sprinkles not only taste good they are absolutely adorable.  Look at those bunnies, carrots and eggs sprinkled in with the pastel jimmies and candy pearls.

Carrot Cake Cupcakes with Pineapple Cream Cheese Frosting

prep time: 1 hourcook time: 30 minstotal time: 1 hours and 30 mins
Delicious, tender carrot and pineapple laced crumb spiced with cinnamon, ginger and nutmeg. Baked to perfection and covered with a pineapple cream cheese frosting.

ingredients:

Cupcakes:
  • 1 c. flour
  • 1 c. sugar
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1/2 t. ginger
  • 1/2 t. nutmeg
  • Pinch of salt
  • 1/2 c. canola oil
  • 1/4 c. butter, melted
  • 1 t. vanilla 
  • 2 eggs
  • 3 carrots, scraped and grated
  • 1/2 c. crushed pineapple drained
Frosting
  • 8 oz. cream cheese, room temperature
  • 1 stick butter, room temperature
  • 1 t. vanilla
  • pinch of salt
  • 2 1/4 c. powdered sugar
  • 1/2 c.  crushed pineapple, drained

instructions:

Cupcakes
  1. Place flour, sugar, baking soda, cinnamon, ginger, nutmeg and salt in the large bowl of a stand mixer fitted with the paddle attachment.  Stir on low speed to combine.
  2. Add oil, melted butter and vanilla to the dry ingredients with the speed still on low.  When moistened, increase the speed to medium and add the eggs, one at a time, beating well between each.  
  3. Turn speed to low and fold in carrots and pineapple.
  4. Divide the batter between a 12 cup cupcake tin that has been treated with baking spray.  Bake in a preheated 350* oven for 25-30 minutes, until a skewer inserted in the center of a cupcake removes cleanly.
  5. Move to a cooling rack and cool in pan for 10 minutes before turning onto the rack to cool completely.
Frosting
  1. In small bowl of stand mixer, fitted with paddle attachment, beat together the cream cheese and butter until smooth and creamy.   Stir in the vanilla.  Gradually add the powdered sugar, using low speed to incorporate and then using high speed until creamy.
  2. Turn speed to low and fold in the pineapple.  
  3. Spread frosting onto the completely cooled cupcakes and garnish as desired (I recommend Sprinkle Pop products)

  5. Carrot cake and cream cheese frosting are a match made in heaven! I love that there is pineapple in the frosting as well, I have never tried that. Those sprinkles are darling!
