Mischievous Monday, Mad Monday, Muffin Monday, Missing Mom Monday....

The mischief didn't really happen on a Monday but I am writing about it today.  It seems Princess Fiona was a little bit ticked off that her loyal subjects should dare to leave her.  So when we came home yesterday, this is what we found.

I may as well take off some of the edging too....

Aaaargh ....suffice it to say we were not happy.  But Princess Fiona was very happy, in fact she was ecstatic to have us home.  She couldn't get enough of us, even if we were scolding her.  It is hard to stay mad at her when she loves you so completely.  So I reminded myself, it is just stuff...it is not living and breathing...it does not love me unconditionally and pine away when I leave it....just stuff.  And stuff can be replaced.

When I got up this morning, I decided I better go through my fridge and remove anything rotting or green.  It really wasn't as bad as I anticipated.  So then I decided I better use up some of my produce before it does rot and turn green.  Unless it is already green in which case it turns white.  And the white stuff, like cauliflower turns black but brocolli which is green turns yellow...well, anyway....you get the idea.  While cleaning out the fridge, I came across some rhubarb that still needed to be used so I decided to make Rhubarb Muffins.  I was feeling lazy so I grabbed a box of cake mix out of the cupboard, doctored it up and added some rhubarb.  What makes it muffins instead of cupcakes????  There is no frosting, silly!!


They turned out light and fluffy.  
Sweet bites with little morsels of tanginess enfolded within.
Yummy!!



Rhubarb Muffins

1 box white cake mix
1/3 c. butter, melted
1 1/4 c. milk
2 eggs
4 large stalks rhubarb, thinly sliced

Place all ingredients except for rhubarb in the large bowl of a stand mixer affixed with paddle attachment.  Beat at low speed until combined and then at med. speed for a minute or two until blended.  Add the rhubarb and stir until combined.  Place in cupcake tins that have been sprayed with cooking spray or fitted with cupcake papers.  Bake at 350* for 15-18 minutes or until a skewer inserted comes out clean.  Print Recipe


I sat a couple aside for Frank and the rest are going with me when I visit Mom. 
I have missed her like crazy!!
And my family knows me well...each day they texted me messages that they had visited and that she was happy and well.
  It made it much easier for me to enjoy my time away.
  I am so blessed to have such caring, loving people in my life.

  1. Muffins look good.....and one of the reasons my pets live in an aquarium filled with water is what you described above. But then again my fish don't really show me that unconditional love. Will be catching up on reading what you have been up to!

  2. I love rhubarb...I never thought of trying muffins. I can eat a pan or two of strawberry rhubarb crisp! I don't have any in my fridge, but thanks for the reminder to roast my cauliflower tonight before it turns black! Sorry about Princess Fiona...Dame Sophie has taken to pulling tissues out of mom's walker and tearing them up all over the house...fun!

  7. I had a dog once that ate an entire wall.... she was so proud of herself for making a nest in the insulation... those muffins look yummy!!
