Irish Cream French Toast Casserole #SundayFunday

Day-old bread, cut into chunks and soaked in an Irish Cream and Egg mixture overnight before being baked, resulting in a custardy bottom layer with a toasted top.  This is a great way to start off your St. Patrick's Day celebrations.

Irish Cream French Toast

I'm not sure how authentic this recipe is but it does use Irish Cream and I was told by my friend Fr. Rooney, who was from Ireland, that you never would have Corned Beef for St. Pat's Day in Ireland.

So I figured if we can take liberties with dinner then we can certainly take liberties with breakfast.  This French Toast Casserole is simply Bread Pudding using Irish Cream in place of some of the light cream.  I guess I could have used Soda Bread to add a little more authenticity,  but I didn't have that on hand.

Should you not want to use alcohol in your French Toast Casserole you could use Irish Flavored Coffee Cream in place of the liqueur.

This was a very tasty and easy Casserole.  I like making French Toast Casseroles because they can sit in the refrigerator overnight and when you get up in the morning you can just pop it in the oven.  I used Maple Syrup to top mine as we were enjoying it for breakfast.  It would make an amazing dessert as well topped with chocolate syrup and whipped cream with a bit of Irish cream added to it.

Irish Cream French Toast Casserole

Ingredients

  • 1/2 loaf of day-old (stale) bread, cubed (I used French Bread)
  • 1/4 c. Irish Cream Liqueur
  • 1/2 c. light cream (half and half)
  • 3 eggs

Instructions

  1. Place the bread cubes into an 8" square baking pan or similar casserole, that has been treated with baking spray.
  2. Whisk together the Irish Cream, light cream, and eggs until well combined. Pour over the bread, cover and refrigerate for several hours and up to overnight.
  3. Bake in a preheated 350* oven for 40-50 minutes, until puffed and golden brown.
