Quick and Healthy Butternut Squash Soup and the Weekly Menu including Friendsgiving and Thanksgiving #SoupSaturdaySwappers

 Holidays can be very busy.  This quick and healthy Butternut Squash Soup starting with frozen squash is a time and stress saver.  It takes only a few minutes of hands on time and half an hour cooking time.  It can be made ahead and rewarmed so there is zero soup stress on the big day.

Juli of Pandemonium Noshery is hosting our Soup Swap this month and invited us to join her in using frozen Fruits and Vegetables to create our dish.  Great idea, especially as we are gearing up for the Holidays.  Time is at a minimum and stress is at an all time high...using frozen produce makes life so much simpler.

This soup is a perfect first course for your Thanksgiving Dinner.  Speaking of Thanksgiving, I am going to be sharing my Thanksgiving Menu with you today along with the rest of the week.  


Have you decided on your menu yet?  My menu is pretty traditional.  We always have Turkey and Fresh Kielbasa, Mashed Potatoes, Stuffing and Pumpkin Pie so I try to add some creativity with different soups, salads, veggies and desserts.  This soup will be starting our dinner this year.

However the Feast always starts with a board.  Cheese Boards are always a fun way to start a celebration and I use them all the time.  Cheese Boards can take on many different styles and ingredients.  It can be as simple as one special cheese with crackers or as creative as you like using whatever you have on hand.

I typically keep the week prior to Thanksgiving simple and, of course, the day after Thanksgiving is always Leftovers.  So here is my Weekly Menu, including a Friendsgiving on Sunday, followed by this delicious soup recipe.

Quick and Healthy Butternut Squash Soup

Holidays can be very busy. This quick and healthy Butternut Squash Soup starting with frozen squash is a time and stress saver. It takes only a few minutes of hands on time and half an hour cooking time. It can be made ahead and rewarmed so there is zero soup stress on the big day.

Ingredients

  • 40 oz. (4 pkgs) frozen butternut squash
  • 1 T. olive oil
  • 1 Vidalia onion, chopped
  • 2 carrots, scraped and sliced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large soup pot over medium high heat.
  2. Add the onions and cook until fragrant and translucent, 4-5 minutes.
  3. Stir in the garlic and squash, season with salt and pepper, and cook for a minute longer.
  4. Add the broth, bring to a boil and cook for about 15-20 minutes.
  5. Using an immersion blender or heavy duty blender, puree the soup until smooth. You can add more broth if the soup is too thick.
