I had spent the afternoon lounging in my pool with a book when the Teen and a friend came home and announced they were starving.  I didn't even realize it was dinner time.  Luckily I had this delicious dish on the table in the time it took me to boil the water and cook the spaghetti.  

I love stir fries and they are a great summertime meal.  The are light, tasty and being cooked stovetop, they don't heat up your house.  I have a wok for my grill as well but stick to my stove top version unless I have company outside that I want to visit with while I cook.  I found this recipe on Eatwell 101 and knew it was going to be a hit.  The whole family loved it, including the Teen and her friend.

Noodle Stir Fry with Chicken

This easy, nutritious and delicious stir fry has dinner on the table in less than half an hour. Tender chicken breast and fresh veggies tossed with spaghetti noodles and a flavorful sweet spicy sauce.

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced into strips
  • 1 T. olive oil
  • 3 garlic cloves, minced
  • 1 carrot, scraped and shredded
  • 8 oz. spaghetti noodles, cooked per package directions
  • Florets from 1 head broccoli
  • 3 scallions, white and light green parts, sliced
  • Toasted sesame seeds
Sauce
  • 1/2 t. ginger paste
  • 1 T. honey
  • 1/4 cup soy sauce
  • 2 T. hoisin sauce
  • 2 t. sesame oil 
  • pinch of crushed red pepper, more to taste
  • freshly ground black pepper, to taste

Instructions:

  1. Add the broccoli florets to the pasta during the last 5 minutes of cooking time. 
  2. While pasta is cooking, whisk togehter the honey, soy sauce, hoisin sauce, ginger paste, sesame oil and peppers.  Set aside.
  3. Heat the olive oil in a wok or large skillet over med high heat.  Season the chicken with salt and pepper and stir fry in hot oil until no longer pink.  Stir in the garlic and carrot.
  4. Drain the pasta and the broccoli and immediately add to the wok along with the sauce.  Toss together and serve, garnished with scallions and toasted sesame seeds, if desired.

  2. Look at all those fresh veggies in there!! I adore how quick and easy stir fry is, and you can use up pretty much whatever veggies you have in the fridge. What a tasty sauce!
