Pinto Beans with Ham and a #Giveaway

If there is anything more comforting than a bowl of tender, smooth beans with chunks of ham, I don't know what it is.  This recipe, made in your slow cooker is the perfect way to put this homey, delcious meal on your table even during busy weekdays.

I was very excited when I received three lovely packages of beans from sponsor, Camellia, in early December.   I knew I was going to serve ham as one of my meats on Christmas Day and I love nothing better than making a pot of beans and ham with that bone afterwards.


So right after Christmas, I grabbed the package of Pinto Beans and put them into water to soak overnight.  In the morning I put them in my slow cooker with that meaty delicious ham bone, some chopped veggies and some chicken broth and out the door we went.


We went and made some returns, took the Teen shopping to use some gift cards she had gotten as gifts and went to Frank's sister's house for dinner.  When we got home, the house smelled amazing.  I removed the bone from the pot and chopped up the ham, returning the meat to the crock.  Then I took the crock and put it in our garage.  It's a Michigan thing.  In the winter our entire garage becomes a second refrigerator LOL.

The following day, I skimmed off the fat that had collected on top of the beans.  This is entirely optional.  You can eat the pintos and beans as soon as you return the ham to the pot and it warms through.  I never do.  I always serve this the second day.  Not only because I like to remove as much fat as possible but because Pintos and Ham are one of those dishes that just keeps improving with age.  

After removing the fat, I put the crock back in my slow cooker on low to warm it through.  Then I made a wonderful batch of cornbread because, in my humble opinion, the only thing better than Pintos and Beans is Pintos and Beans with Cornbread.

My brother and sister in law arrived for dinner and the look on her face when she saw that I made her favorite meal was worth the 2 day wait.  We enjoyed our dinner as we discussed and made arrangements for our trip to the Florida Keys.  It was a perfect night.

ingredients:

  • 1 lb. dried Pinto Beans (I used Camellia)
  • 1 meaty ham bone
  • 2 carrots, scraped and chunked
  • 2  stalks celery, cleaned and chunked
  • 1 lg. sweet onion, peeled and quartered
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 t. chili powder
  • pepper to taste
  • 8 c. chicken stock

instructions:

How to cook Pintos and Beans

  1. Place the beans into large bowl. Fill the bowl with water and set aside for 8 hrs. or overnight.
  2. Drain and rinse the beans.  Place into the crock of a slow cooker along with the ham bone.  
  3. Place the carrot, celery, and onion into the bowl of a food processor and pulse until chopped.  Alternately, you can chop by hand.  Place into the crock with the beans and ham.  Season with the garlic, chili powder and pepper.  Add a bay leaf to the crock along with the chicken stock.  
  4. Turn on low and cook for 8 hrs.  Remove ham bone from crock and set aside to cool.  When cool enough to handle remove and trim meat, cutting into bite size pieces.  Return ham to crock.  
  5. **You can now rewarm the ham in the beans and serve, if desired.
  6. Place the crock into the refrigerator overnight.  Remove an fat that congealed on the top of the beans and place crock into slow cooker on low for 3 hrs, until heated through.

  1. I think in our part of the world, our bean love has to do with the ham bone. Once my head exploded after Christmas and "someone helping me" summaily threw away my ham bone after trimming off the meat. Fortunately there was enough glue in the world to put the pieces of my brain back, ala Humpty Dumpty, but I bet they never throw out my ham bone again. LOL! Ham bones are like gold around here. :D

    1. Who in their right mind would throw away a ham bone?!! If they don't go right into the soup pot, they go right into the freezer.
