Juli of Pandemonium Noshery invited the members of Foodie Extravaganza to join her in preparation for National Maple Syrup Day on December 17th.


I love maple syrup and use it quite often while cooking for savory dishes as well as for sweet.  But I've been on a cookie baking spree for the past couple of weeks getting prepared for a bake sale at our church so I went with cookies for this celebration.

Lets take a look and see if the other's decided to go sweet or savory using Maple Syrup today........

It didn't take the Teen long to come in from school each day and check out the counter to see what kind of cookies I had baked.  Each day, I would package and freeze whatever cookies I had made to give to the church, leaving out a half dozen or so for us to snack on. 


The day she found these on the counter was different than each other day.  On the other days she would grab a couple of cookies and head into her room.  On this day, she came back out after a few minutes and grabbing a couple more cookies, asked where the rest were.  I told her they were in the freezer and she said "Can we not donate these or could you make another batch please?"  They are easy, peasy and quick so I was happy to make her another batch.

Maple Coconut Cookies

Maple Coconut Cookies

These Maple Coconut cookies are quick to put together and quick to disappear. You might want to make two batches.

ingredients:

  • 1/2 c. shortening
  • 1 c. packed brown sugar
  • 1 egg
  • 1/2 c. pure maple syrup
  • 1/2 t. vanilla
  • 1 1/2 c. flour
  • 2 t. baking powder
  • 1/2 t. salt
  • 1 c. sweetened shredded coconut

How to cook Maple Coconut Cookies

  1. In large bowl of stand mixer, fitted with the paddle attachment, cream together the shortening and brown sugar until light and fluffy.  
  2. Add the egg, vanilla and syrup.  Beat until well combined.
  3. Add the flour, baking powder and salt.  With the speed on low mix until incorporated.  Increase speed and mix until blended.  Turn speed back to low and stir in the coconut.
  4. Use a small cookie scoop to drop onto a baking sheet that has been lined with parchment or a silicone mat.  Bake in a preheated 375* oven for 10-12 minutes, until lightly browned.
