Pizza Grilled Cheese #NationalCheeseLoversDay

Amy of House of Nash Eats invited us all to join her for an ooey, gooey, cheesy celebration in honor of this food holiday.

I was happy to join in on the fun.  I LOVE cheese.  All kinds of cheese.  Even the stinky cheese.  My family, however, they like their cheese a little bit tamer.  One thing we can all agree upon though is that when we think of cheese we think of pizza. We all LOVE pizza!


So I decided to bring some grilled cheese sandwiches to the party but to give them a Pizza flair.  I used sliced Italian bread, buttered one side and put it onto the griddle.  Then I topped it with my homemade Marinara sauce.


Next came a layer of pepperoni.  I used six slices on each sandwich.  Just a little note: I think next time I will put the pepperoni down first and then top it with the sauce to prevent the sauce from soaking into the bread and making it soggy.  It was still delicious, just not as crisp as I had hoped.


Next comes the best part.  I placed a slice of fresh Mozzarella on each sandwich, sprinkled that with fresh basil and dried Italian herbs.  Then I finished it off with a sprinkle of Parmesan for even more cheesy goodness.


Top with another piece of Italian bread that is buttered on the top.  Grill to a golden brown and until the cheese is melted and gooey.  This was a perfect dinner served with a cup of parsnip soup.

Pizza Grilled Cheese

ingredients:

  • 6 slices Italian bread
  • butter, softened
  • 6 T. pizza or marinara sauce
  • 18 slices pepperoni
  • 3 slices fresh Mozzarella cheese
  • 3 basil leaves, thinly sliced
  • Dried Italian herbs, to taste
  • 3 T.  shredded Parmesan cheese

instructions:

  1. Butter one side of each slice of bread.  Place a griddle over medium heat and allow to get hot.  Place three slices of bread, butter side down, onto the griddle.  Add 6 slices of pepperoni onto each piece of bread, overlapping if necessary to completely cover.  Add 2 Tablespoons of sauce to each sandwich, spreading to cover pepperoni.  Add 1 slice of Mozzarella to each sandwich, then sprinkle with the thinly sliced basil and some dried Italian herbs.  Top each with 1 Tablespoon of Parmesan cheese.  Place another slice of bread, butter side showing, onto the top of the filling.  
  2. Grill over medium heat until golden brown on the bottom.  If the bottom starts to brown before the cheese starts to melt, lower the heat a bit.  Flip and cook the second side until golden brown and cheese is melted.

NOTES:

These sandwiches can be made one at a time and kept warm in a 200* oven using a pan if you don't have a griddle.
