Irish Fish Cakes and the Weekly Menu #FishFridayFoodies

These Irish Fish Cakes, starting with leftovers, are delicious.  Should you not have leftover mashed potatoes and/or Cod Fillet you will want to make some just to enjoy this dish.

The Fish Friday Foodies are Celebrating Ireland today.....

It is with a heavy heart that I announce that this will be the final Fish Friday Foodie event.  I started this group seven years ago and it was very well received and a great success.  It is not surprising that after all this time our membership has gone down.  Many of the original members are no longer blogging and those that remain have run out of fresh ideas for themes to host.  It was a great run and I made a lot of wonderful friends that I know will be joining in new adventures with me.

This month I asked them to celebrate St. Patrick's Day with Seafood and Fish in place of Corned Beef and Cabbage.  Let's see what everyone brought to the party.......

There are many reasons why I decided to choose this theme and share this recipe with you today but the most important is because as a Catholic during Lent we don't eat meat on Fridays not even Corned Beef on St. Pat's Day.  So instead I thought that I would look for Irish Seafood and Fish recipes that can be served up for dinner today instead.

We normally go out to a Fish Fry on Friday's during Lent but tonight we are going to a Celtic St. Patrick's Celebration at our local theater so have invited our friend John and Frank's siblings to join us, starting with dinner here.  Our sister in law is not a fish/seafood lover so I am making a hearty Ribollita and some Mac and Cheese to accompany our fish.

Tomorrow, we are having the Angel Face for the day as her parents are working.  They will join us for dinner when they pick her up.  On Wednesday I am going to visit my friend, Sister Maryann.  She lives nearly 3 hours away so we will have lunch with her and then stop on the way home for dinner.

Irish Fish Cakes

Irish Fish Cakes

These Irish Fish Cakes, starting with leftovers, are delicious. Should you not have leftover mashed potatoes and/or Cod Fillet you will want to make some just to enjoy this dish.
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

  • 1/2 -1 c. leftover mashed potatoes, or 1 russet potato, peeled boiled and mashed
  • 2 (6 oz) cooked cod fillet, flaked
  • 2 t. ketchup
  • 1 t. chili garlic sauce
  • juice of 1/2 lemon
  • 1 egg, beaten
  • salt and pepper, to taste
  • flour, as needed
  • 1 sleeve buttery crackers, finely ground
  • Canola oil for frying
  • Tartar Sauce for serving

Instructions

  1. Combine the mashed potatoes, cod, ketchup, chili sauce, lemon, egg, salt and pepper. If need add flour to this mixture until it can be formed into patties but is still moist.
  2. Coat the bottom of a skillet with oil and place over med heat until hot.
  3. Using about 1/3 cup portions form the cod mixture into patties and then dredge them on both sides with the cracker crumbs.
  4. Cook, in batches if necessary, in the hot oil until golden brown and warmed through, about 5 minutes per side.
  5. Serve with tartar sauce, if desired.
