I'm joining the Improv Cooking Challenge Crew in sharing No Sugar Sweets.......
When Nichole of Cookaholic Wife announced this month's Cooking Challenge I was not sure if I would be attending.  I do love this group and the events each month but I have Spring Sweet's Week coming up and am going to be sharing 5 days of Sweet Treats with you.  I wasn't sure that I wanted to share another sweet treat right before.

Then I remembered that several month's ago, Adagio Bees, had sent me some honey with the agreement that I would use this honey in recipes that I shared with my readers and give my honest opinion of their product. I received no monetary compensation and all opinions on this and all sponsored products is strictly my own. 

I had made a honey butter that I was going to share with you but then I got hit by a truck and spent a month in the hospital.  When I was able to start blogging again, I had forgotten about the gorgeous honey that I was sent. 

I have healed up very nicely and am now back to being able to do everything that I did before albeit much slower and for less time often with a nap needed throughout the day.  

Adagio Bees is an adjunct of Adagio Teas who also makes spices under the name Selefina.  I have received both teas and spices from this company in the past and love their products so I was very excited to receive this sample box of raw honey.  

My husband was having a CPL class and I made this fruit salad to serve with muffins and coffee when the students arrived.  I had some wonderful citrus and mint left from a generous box provided by Melissa's Produce for the upcoming Spring Sweet's Week event.

I sliced up the fruit and placed it onto a platter.  Then I drizzled it with some of the raw Tupelo honey and some extra virgin olive oil.  I finished it off with a sprinkle of Fleur de Sel from Selefina and chopped mint leaves.  It was a lovely, delicious salad with layers of sweet and tart.  

Sneha of Sneha's Recipe also took the challenge this month and served up some Keto Strawberry Microwave Muffins.  I am anxious to go take a look at that recipe!!!

Citrus and Mint Salad with Honey Drizzle

Ingredients

  • 2 Cara Cara Oranges
  • 2 Blood Oranges
  • 8 Kumquats
  • 5-6 mint leaves, chopped
  • 1 T. raw honey (I used Tupelo from Adagio Bees)
  • 1 T. extra virgin olive oil
  • sprinkle of Sea Salt

Instructions

  1. Peel and remove the pith from the oranges. Cut into slices and arrange decoratively on a platter.
  2. Cut the kumquats in half and scatter over the orange slices.
  3. Drizzle the fruit with the Olive Oil and Honey. Sprinkle with sea salt and chopped mint and serve.
