Tuscan Tortellini Soup

Tuscan Tortellini Soup

This hearty and delicious soup is perfect as a warm comforting meal with a nice slice of bread and is ready in less time than it would tae to order carry out.

Ingredients

  • 1 T olive oil
  • 1/2 vidalia onion, diced
  • 1 lb. cooked Italian style, fully cooked chicken sausage, sliced into rounds
  • 3 cloves garlic, minced
  • 6 c. chicken stock
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1/2 t. crushedred pepper (or to taste)
  • salt and pepper, to taste
  • 1 family size package refrigerated tortellini
  • 1 (15 oz) can cannellini beans,drained and rinsed
  • 8 oz. baby spinach
  • shredded parmesan cheese, for serving, if desired

Instructions

  1. Heat oil in large soup pot over med high heat. Add the onions and cook, stirring for a few minutes until fragrant and translucent.
  2. Add the sausage and cook until browned. Stir in the garlic.
  3. Add the broth, tomatoes with juices, tomato sauce, crushed red pepper, salt and pepper.
  4. Stir to combine and bring to a boil. Add the pasta, reduce heat to a simmer and cook for about 15 minutes.
  5. Stir in beans and spinach, cook for another 5 minutes and serve, passing the parmesan cheese
