A Birthday Celebration featuring Yellow Cake for the Final 2022 #CakeSliceBakers

Last month we celebrated Little Miss M's 2nd Birthday.  This simple but delicious yellow cake made the perfect birthday cake for the celebration.

This is the final bake from Zoe Bakes Cakes, the  choice for the Cake Slice Bakers in 2022......




Each month The Cake Slice Bakers are offered a selection of cakes from the current book we are baking through. This year it is Zoë Bakes Cakes by Zoē François. We each choose one cake to bake, and then on the 20th - never before - we all post about our cake on our blogs. There are a few rules that we follow, but the most important ones are to have fun and enjoy baking & eating cakes!

I baked this cake in a 9x13" pan, frosted it with Amy's Cream Cheese Frosting and decorated it with sprinkles.  It was a joyful, happy day in our lives.

Served up with ice cream it was a wonderful finish to dinner and a great segue into the opening of gifts.

I have enjoyed this cookbook very much.  I was pleased with each and every cake that I baked from it.  I look forward to next year's choice and I think you will like it as well.  Stop by January 20th for the big reveal and the first bake from the new book.

Yellow Cake

Yellow Cake

This simple but delicious yellow cake made the perfect birthday cake.
Prep time: 10 MinCook time: 45 MinTotal time: 55 Min

Ingredients

  • 1 stick butter, room temperature
  • 1/2 c. canola oil
  • 2 1/4 c. sugar
  • 1 T. vanilla
  • 4 eggs, room temperature
  • 5 egg yolks, room temperature
  • 2 2/3 c. flour
  • 2 1/2 t. baking powder
  • pinch of kosher salt
  • 1/2 c. light cream
  • 1/2 c. sour cream, room temperature

Instructions

  1. In large bowl of stand mixer, fitted with the paddle attachment, beat the butter until creamy and smooth.
  2. Reduce speed to medium and add the oil, sugar and vanilla. Beat for about 5 minutes, until light yellow and doubled in volume.
  3. Reduce speed to medium low and add the eggs and yolks, one at a time, mixing well after each.
  4. Whisk together the flour, baking powder, and salt. Set aside.
  5. Whisk together the milk and sour cream. Set aside.
  6. Add 1/3 of the flour mixture to the butter mixture and mix until incorporated. Add half the milk and mix until combined. Continue with another third of the flour, remaining milk and the remaining flour. Scraping the bowl as needed.
  7. Pour the batter into a 9x13" pan that has been treated with baking spray and bake in a preheated 350* oven for about 45 minutes, until a tester inserted in the center removes cleanly.
  8. Let cool completely in pan and frost with desired frosting and garnishes.
