Pecan Rice #HolidaySideDishes

This brown rice pilaf flavored with pecans, onions and spices is the perfect side dish for all your holiday meals.  It is wonderful served with roasted poultry or meats. It is an amazing bed for your seafood. It is a filling side dish for any vegetarians in your group and can be made vegan by swapping out olive oil for the butter.

Heather of Hezzi D's Books and Cooks is hosting this event and asked us all to share side dishes that would be suitable for the holidays.  We, of course, will be sharing recipes perfect for Thanksgiving and Christmas but the holidays don't end there.  I also expect some if not most of the recipes we are sharing will work for Hannukah, Kwanzaa, New Years and Boxing Day. 

In fact, this rice dish is perfect for your Easter and Valentine Dinners.  I served it up for Mardi Gras, last year and it was an amazing addition to the celebration.  

Pecan mixture for rice

Unlike my Autumn Rice Pilaf  that has pecan halves and chunks of apples and onions.  This Rice dish uses finely ground pecans so that you get all the flavors without any change in texture.

Pecan Rice

Pecan Rice

This brown rice pilaf flavored with pecans, onions and spices is the perfect side dish for all your holiday meals. It is wonderful served with roasted poultry or meats. It is an amazing bed for your seafood. It is a filling side dish for any vegetarians in your group and can be made vegan by swapping out olive oil for the butter.

Ingredients

  • 2 c. brown rice
  • 4 c. chicken or vegetable broth
  • 4 T. butter
  • 1 onion, finely chopped
  • 1 c. finely chopped pecans
  • handful of parsley leaves, minced
  • 1/2 t. dried basil
  • 1/2 t. dried ginger
  • salt and pepper, to taste

Instructions

  1. Bring the broth to a boil in a large pot over high heat. Stir in the rice, reduce heat to low, cover and simmer for about 40 minutes, until all liquid is absorbed.
  2. Melt the butter in a saute pan over med high heat. Add the pecans,onions, parsley, basil, ginger, salt and pepper. Cook a few minutes until onions are tender then stir into the rice and serve.
