Who says you can't have your Lobster Roll and BLT too?  The best of both worlds are combined in one delicious sandwich.

Lobster Salad

I did share a lobster roll recipe with you once before back in 2017 that was inspired by a book I read called Sisters One, Two, Three.  I flavored that lobster salad with tarragon. 

In this recipe I flavored the lobster salad with a bit of homemade pesto to tie in with the tomatoes from our garden.  It is a delicious sandwich and I could have eaten both of them but Frank has been working very hard on my kitchen so I shared with him.

This recipe makes 2 lobster rolls, if you are very hungry double the recipe so each person can have two or do as I did and serve up some potato salad with the sandwich.

Lobster Roll BLT

Lobster Roll BLT

Who says you can't have your Lobster Roll and BLT too? The best of both worlds are combined in one delicious sandwich.

Ingredients

  • Meat from 2 cooked Lobster Tails, cut into large dice
  • 4 slices bacon, cooked crisp and cut in half
  • Romaine Lettuce, coarsely chopped
  • 1 Tomato, diced
  • 1/4 c. Miracle Whip
  • 1 t. lemon juice
  • 1 stalk celery, diced
  • 1 t. pesto
  • salt and pepper, to taste
  • 2 top split hot dog buns

Instructions

  1. Mix together the Miracle Whip, pesto, lemon juice, salt and pepper.
  2. Spread each hot dog bun with a little of the dressing.
  3. Add the celery and lobster to the remaining dressing and toss to coat.
  4. Place the chopped lettuce on the bottom of the buns.
  5. Add 4 half slices of bacon to each roll and then top each with half of the lobster salad.
  6. Sprinkle with tomatoes and serve.
