Crustless Broccoli and Cheese Mini Quiches #BrunchWeek

These little bite size, crustless quiches are perfect for on your brunch buffet or as an appetizer to snack on while waiting for a plated brunch.

Today is the first day of Brunch Week.......
Each year Christie of A Kitchen Hoor's Adventures invites us to join her in sharing recipes that are perfect for hosting a brunch.  Of course, the recipes found here are not only perfect for brunch but can be served anytime of the day as part of a full meal and many of them, like these little quiche, are perfect as appetizers and snacks too.

I love serving up quiche.  They are a great way to use up leftovers or those little odds and ends that you find in your refrigerator.  These mini quiches were made with some leftover broccoli that I had but you can just microwave a little broccoli or use part of a package of frozen, thawed broccoli if you don't have leftovers.

I use a crust for my large, full size quiche but when making these baby, bite size goodies, I find it is easiest to go crustless.  This also makes them perfect for any of your family/friends who are gluten intolerant.

Crustless Broccoli and Cheese Mini Quiches

Crustless Broccoli and Cheese Mini Quiches

These little bite size, crustless quiches are perfect for on your brunch buffet or as an appetizer to snack on while waiting for a plated brunch.

Ingredients

  • 1 1/2 c. cooked broccoli florets
  • 1/2 c. shredded colby jack cheese
  • 1/2 c. half and half
  • 3 eggs
  • salt and pepper, to taste
  • pinch of freshly ground nutmeg

Instructions

  1. Place the broccoli, cheese, cream and eggs into the bowl of a food processor. Season with the salt, pepper and nutmeg. Pulse 4-5 times until broccoli is chopped fine and all ingredients are incorporated.
  2. Divide between 24 mini muffin cups that have been liberally treated with cooking spray.
  3. Bake in a preheated 350* oven for 15-20 minutes, until puffed and golden and a small knife inserted in the center removes cleanly.
  4. Let cool in pan for about 10 minutes before removing from pans and placing on a platter. Can be served warm or room temperature.
