Roasted Carrots with Chocolate Balsamic Glaze #ChocolateWeek

These carrots are roasted to a tender, sweet, golden brown before being drizzled with a dark chocolate balsamic glaze.  They turn an ordinary dinner into something special.

You could serve these carrots up as part of a Valentine's Day Dinner with a Chocolate theme.  I shared a Chocolate and Pomegranate Crostini appetizer yesterday.  This would be a perfect start to you dinner of Pork Tenderloin with Chocolate Molasses Gravy and these carrots.  

Looking for a more casual dinner?  Try these Chicken Mole Tacos.   Valentine's Day falls on Monday this year so you could serve up your Mexican Monday meal.  It is sure to be a big hit.

I served these carrots up with Lamb Kofte, Lebanese Salad and a bottle of Western Australian Wine.  It was the best dinner I made this month.
