Chicken Mole Tacos #Chocolate Week

Add some dark chocolate to your tacos today.  This mole sauce adds tons of flavor to ground chicken helping to make your tacos a bit heart healthier. Adding chopped nuts and using soft corn tortillas instead of fried hard shells add fiber and continue with the heart healthy theme.

We are still celebrating Chocolate Week here in anticipation of Valentine's Day.  There are hearts everywhere.  Let's use those hearts to remind us to take care of our hearts and those of our loved ones.

I used this chocolate from Grenada for my recipes this week.  Grenada is known for it's chocolate that is grown sustainably and organically.  I was fortunate enough to visit the chocolate factory when we were visiting the island on a Scuba trip.

Mexican cuisine uses chocolate for many savory applications the best known, Mole, is a sauce used to flavor meats for application in enchiladas, stews and tacos.  

Dark chocolate is known to have antioxidants that help lower blood pressure and choleserol levels.  The cinnamon in this sauce helps to lower blood sugar.  Using ground chicken instead of ground beef lowers the fat content and calories.  The addition of chopped nuts ups the protein level and also protects the heart by lowering cholesterol levels.  Finally, using soft corn tortillas instead of flour or hard, fried taco shells, gives you more fiber and grains with less fat.

But the best thing about these tacos is the taste.  Your family is going to be so busy enjoying this new Taco Tuesday treat that they will never realize that they have been healthified.
