 These might go down as my favorite cookie that I bake this season.  Crunchy coconut, oatmeal cookies sandwich a chocolate cream cheese filling.  Soooooo Scrumptious!!

 I am hosting this week and since I was going to be busy getting ready for Christmas I invited the others to join me in making Christmas Cookies.  I thought it would be fun to change things up and learn a little bit about other cultures while getting some new recipes for on the dessert table.

South African Double Crunchers

I found this recipe in Taste of Home in an article titled 40 Unique Christmas Cookies from Around the World.  I don't know how authentic they are.  Additional research found several articles for South African Crunchies using some of the same ingredients for the cookie.  They were served as bar cookies and not sandwiched with filling.  

These sounded better to me so I went with them and BOY O BOY, am I glad I did.  They are crisp and crunchy and sinfully decadent with that chocolate cream cheese filling.  I am glad that I had a Cookie Exchange to take them to because I know that I would not have been able to resist grabbing one every time I passed the cookie jar.

These are one of many cookies I have baked so far this year.  I have also made Molasses Cookies, Chocolate Peanut Blossom Cookies, Shortbread Peppermint Crunch Cookies and just yesterday I shared miniature Nut Tarts.

South African Double Crunchers

These might go down as my favorite cookie that I bake this season. Crunchy coconut, oatmeal cookies sandwich a chocolate cream cheese filling. Soooooo Scrumptious!!

Ingredients

  • 1/2 c. butter, room temperature
  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 1 egg
  • 1/2 t. vanilla
  • 1 c. flour
  • 1/2 t. baking soda
  • pinch of salt
  • 1 c. oats
  • 1 c. crushed corn flakes
  • 1/2 c. shredded sweetened coconut
  • 6 oz. cream cheese, room temperature
  • 1 1/2 c. powdered sugar
  • 2 c. semi sweet chocolate chips, melted

Instructions

  1. In large bowl of stand mixer, fitted with the paddle attachment, cream the butter,cream cheese, sugar and brown sugar until light and fluffy. Beat in egg and vanilla.
  2. With mixer on low add the flour, baking soda, and salt. Mix until combined, increase speed and mix well. With speed on low fold in the oats, cornflakes and coconut.
  3. Using a cookie scoop, form into 1" balls. Place onto cookie sheets that are covered with parchment or silicone mats about 2" apart.
  4. Cover with another sheet of parchment and, using the bottom of a glass, flatten the dough. You should end up with about 48 cookies.
  5. Bake in a preheated 350* oven for 8-10 minutes until lightly browned. Remove to a rack to cool completely.
  6. In the small bowl of the stand mixer, fitted with the whisk attachment, beat the cream cheese and powdered sugar until smooth. Add the chocolate and beat until well combined.
  7. Spread about a Tablespoon of filling onto 24 cookies and top with the remaining 24 cookies. Store in the refrigerator until ready to serve.

  4. Wendy these cookies remind me of the South African Bakers brand of Romany Creams. Oats cookies are usually sandwiched with butter creams of different flavours.Your South African Double Crunchers are tempting.
