Beef and Sweet Potato Stew #MultiCookerMonday

I love making stew in my slow cooker.  It guarantees you moist, fork tender meat each and every time.  In this version Beef and Sweet Potatoes are joined with Poblano Chiles and Southwestern spices for a flavorful, comforting dinner with barely any hands on time.

Sue of Palatable Pastime started this group of bloggers who have been sharing our recipes using small kitchen appliances all year long.  Sue decided to switch it up and start a Potluck Party event on the last Saturday of each month where we can share our choice of recipes regardless of what appliances were made to create them.  I will miss our multi cooker Mondays but am looking forward to our Potluck Parties.

Using your small kitchen appliances is a Godsend over the busy holiday season.  I made this stew up the night before when I had a few extra minutes.  Then in the morning I grabbed the crock out of the refrigerator, turned it on low and headed out to run my errands and get the rest of my Thanksgiving groceries and preparation done.

When we were finished and all the make ahead dishes were prepped and ready to go; we sat down to dinner, opened a wonderful bottle of wine and were able to relax knowing we were all prepared and ready for our Thanksgiving gathering.  You can read about the wine pairing with L'Ecole Perigee in this post.  It was wonderful and I was able to breathe and enjoy the anticipation of family gathering together to give thanks for the blessings we have received.

I will be using my small kitchen appliances a lot this week as we prepare for Christmas.  A couple of these recipes shared today have caught my eye and will be perfect during the chaotic Christmas rush.

Beef and Sweet Potato Stew

I love making stew in my slow cooker. It guarantees you moist, fork tender meat each and every time. In this version Beef and Sweet Potatoes are joined with Poblano Chiles and Southwestern spices for a flavorful, comforting dinner with barely any hands on time.

Ingredients

  • 1 lb. beef stew meat
  • 1/4 c. flour
  • salt and pepper, to taste
  • 1 T. olive oil
  • 2 t. tomato paste
  • 2 c. beef broth
  • 1 (15 oz) can diced tomatoes, with juices
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 2 t. chili powder
  • 1 t. cumin
  • 1 t. dried oregano
  • 1 large sweet potato, peeled and cubed
  • 1 poblano chili
  • squeeze of lime juice

Instructions

  1. Place the poblano pepper on a rack placed over a broiler pan and broil, turning as needed, until skin is charred and blistered. Enclose in a paper bag and set aside.
  2. Place the flour, salt and pepper in another bag. Add the beef and shake to coat.
  3. Heat the olive oil in a large skillet over high heat. Add the beef and cook until browned all over. Remove with a slotted spoon to the crock of a slow cooker.
  4. Add the broth to the skillet and cook over high heat, scraping up any browned bits stuck to the bottom of the pan. Stir in the tomato paste and pour over the meat in the crock.
  5. Add the tomatoes, chili pepper, cumin and oregano to the crock. Peel and remove the seeds from the poblano pepper, roughly chop and add to the mixture along with the sweet potato.
  6. Cover and cook on low for 8-10 hrs.
