Apple Pie Muffins #Muffin Monday

Having a hard time deciding whether to enjoy these muffins for breakfast or dessert?  Do as I did and have them for both.

Stacy of Food Lust People Love invites us to join her on the last Monday of each month in sharing our Muffin recipes.  I am always up for new muffin recipes to try.  They are perfect for breakfast, snacks and desserts.  They are quick and easy to make, they freeze well and I normally have all the ingredients on hand.   Let's see what recipes are being shared today........

Did you go apple picking this fall?  We go each year and then have apples to enjoy well into the cold winter months.  We turn them into pies, apple butter and applesauce.  I fry them up as a side dish for dinner, pickle them, and add them to main courses like this Braised Pork Roast with Apples, Sweet Potatoes and Parsnips.

Of course, they go into tons of other Dessert recipes and have even found their way into this Apple Cheddar Chop Bread.  Today they went into Muffins.  This recipe calls for 2 cups finely diced apples, that was 2 large apples, I used one Spy and one Jonathon.

It takes only a couple of minutes to turn these apples into a pie filling, that you set aside to cool, before making the muffins.

Once the apples have cooled, fill the tins 3/4 of the way with batter and spoon the apples on top.

Sprinkle them with a streusel topping and pop them into the oven for 20 minutes.

Enjoy these flavorful fall muffins for breakfast with your coffee, as an afternoon snack with your tea or around the campfire with a glass of hot cider.  Happy Fall Y'all.

Apple Pie Muffins

Apple Pie Muffins

Tender Muffins topped with Apple Pie Filling and Streusel make a perfect breakfast or dessert.

Ingredients

apple pie filling
  • 2 lg apples, peeled, cored and finely diced
  • 3 T. sugar
  • 3 T. water
  • 2 T. brown sugar
  • 1 T. flour
  • 2 T. butter
  • 1 t. lemon juice
  • 1 t. vanilla
Streusel
  • 3 T. brown sugar
  • 2 T. flour
  • 2 T. oatmeal
  • 2 T. cold butter, diced
Muffins
  • 1 3/4 c. flour
  • 1/2 c. sugar
  • 2 t. baking powder
  • 1 t. cinnamon
  • pinch of salt
  • 1 egg
  • 3/4 c. milk
  • 1/4 c. canola oil

Instructions

Apple Pie Filling
  1. Combine the apples, sugar, brown sugar and water in a small saucepan over medium heat.  Bring to a boil.  Sprinkle with the flour. Cook, stirring, for a minute or two, until thickened.  
  2. Stir in the butter, lemon juice and vanilla.  Remove from heat and set aside to cool.
Streusel
  1. Place the brown sugar, oats, flour and butter in the bowl of a food processor.  Pulse a few times until you have coarse crumbles.  Set aside.
Muffins
  1. Combine the flour, sugar, baking powder, cinnamon and salt in a large bowl. 
  2. Whisk together the egg, milk and oil.  
  3. Add to the flour mixture and stir just until combined and moistened. 
  4. Divide batter between 12 muffin cups that have been treated with baking spray of lined with paper liners. Top with the apple pie filling, dividing it between the 12 muffins, about a Tablespoon each.  Sprinkle with the streusel.
  5. Bake in a preheated 400* oven for about 20 minutes or until a skewer inserted removes cleanly.
  6. Let cool in pan on rack for a few minutes before removing the muffins to the rack to cool completely.

  6. I just made some apple-walnut bread pudding that was so delicious. We ate it for breakfast some too. I hope I get the nerve to post it b/c the photos are awful. :) Love these muffins though. Definitely fall flavors at their best!
