Melted Blueberry Ice Cream Cake #BundtBakers

Just 3 ingredients and you have a wonderful dessert to take with you to your next outdoor gathering.  I added a blueberry compote that also takes only 3 ingredients.  Life is good and tasty.

Blueberry Cheesecake Ice Cream

I had made some Blueberry Cheesecake Ice Cream for a Sunday Funday event and still had some left in the freezer.  When Sue announced the theme for this month's bundt cake, I hid that ice cream way in the back so it wouldn't get eaten.  I knew that it was going to be a great base for this cake.

When I was ready to make this cake I pulled the ice cream from the freezer, some eggs from the refrigerator and a boxed cake mix from the pantry.  That's it.  Just 3 ingredients.

I allowed the ice cream to melt and then mixed it together with the boxed mix and 3 eggs before pouring it into a bundt pan and putting it into the oven.

Blueberry Compote

While the cake baked I made a blueberry compote to serve with the cake.  You don't need to make this, you can always just drizzle on a glaze, but this compote was lovely with the cake.  It only takes 3 ingredients as well.  
  • 1 pt. Blueberries
  • 1/3 c. sugar
  • 1/3 c. water
Place all ingredients into a saucepan, bring to a boil and cook, stirring until blueberries start to pop.  Remove from heat and let cool.

If I were serving this at home, I would have topped the slices of cake with vanilla ice cream and then ladled the compote over it but I was taking this to a graduation party so I sliced up the cake, placed the compote next to it and left the ice cream at home.

This cake is so simple and delicious you will want to make it again and again.  You can use any flavor ice cream that you have on hand.  You can top it anyway you want or use no topping at all.   I am anxious to try it with some melted cookies and cream ice cream, topped with frozen cookies and cream ice cream and some Sander's hot fudge.  I've got myself drooling all over my keyboard here......

Melted Blueberry Ice Cream Cake

  1. Melt your ice cream and measure out 2 cups.  If you are short you can add some heavy cream to make 2 cups.
  2. Pour into the bowl of a stand mixer fitted with the paddle attachment.  Add the cake mix and the eggs, beat until combined.
  3. Pour into a bundt pan that has been treated with baking spray. 
  4. Bake in a preheated 350* oven for 35-40 minutes, until a skewer inserted removes cleanly.
  5. Let cool in pan on wire rack for 10 minutes before turning onto rack to cool completely.
  6. Top with Blueberry Compote, if desired.  Other topping considerations could be frosting, glaze, sprinkles and/or ice cream.

  2. I'm surprised your family didn't search for that ice cream in your freezer, Wendy! Homemade ice cream doesn't last long at our house. Your cake and that compote are both gorgeous!

    1. Haha Stacy....That would require some effort on their part. They normally ask "is there any ice cream left" and if I say yes they ask me to get some for them LOL.
