Cam of Culinary Adventures with Camilla is hosting this week and asked us to join her in celebrating National Peach Month.  I decided to toast to the holiday.  Let's see what the others are bringing to the celebration........
This is prime Peach season in Michigan right now so I am very happy to have some wonderful and delicous sounding recipes to try.  I am surprised by how many of my fellow bloggers were like minded with drinks and cocktails this month.  

I'm going to make myself another cocktail and relax in front of the computer as I read them all and make my plans.  Won't you join me?......

Fuzzy Melba

Made with fresh peaches and raspberries, this frozen drink is the perfect summertime cocktail.

Ingredients

  • 1/2 c. raspberries
  • 5 T. simple syrup, divided
  • 1/3 c. spiced rum
  • 1/3 c. lime juice 
  • 1 c. fresh peach slices
  • 1/3 c. ice cubes
  • 1 lime wedge
  • sugar for rimming glasses

Instructions

  1. Rub the lime wedge around the rim of two chilled glasses and dip them in sugar that has been placed on a shallow plate.  Set aside.
  2. Puree the raspberries with 2 T. of the simple syrup in a blender.  Divide between the 2 glasses.
  3. Rinse blender and add the rum, lime juice, remaining simple syrup, peaches and ice.  Puree this mixture until smooth.  Pour equally over the raspberry puree in the glasses and serve immediately.
