This cake comes together quickly and takes less than half an hour to bake.  Allowing for 25 minutes to cool you can have a wonderful dessert on the table in an hour.

Peanut Butter Cake

Peanut Butter Cake

This is a peanut butter lovers dream come true. Peanut Butter Cake with Peanut Butter Frosting topped with Honey Roasted Peanuts.

Ingredients

Cake
  • 3 T. creamy peanut butter
  • 3 T. canola oil
  • 1 egg
  • 1/2 c. buttermilk
  • 1/2 t. vanilla
  • 1 1/4 c. flour
  • 1 1/4 t. baking powder
  • 1/4 t. baking soda
  • pinch of salt
  • 3/4 c. packed brown sugar
Frosting
  • 1/4 c. butter, room temperature
  • 1/4 c. creamy peanut butter
  • 1 T. honey
  • 1/4 t. salt
  • 1/2 t. vanilla
  • 3/4 c. powdered sugar
  • Chopped honey roasted peanuts for garnish, if desired

Instructions

Cake
  1. Combine the peanut butter and oil in a small sauce pan over medium heat.  Cook and stir until melted and smooth.  Set aside.
  2. Whisk together the egg, buttermilk and vanilla.  
  3. Combine the flour, baking powder, baking soda, salt and brown sugar in the large bowl of a stand mixer, fitted with the paddle attachment.  Mix on low speed.  Add the egg mixture and mix until blended. Gradually add the peanut butter mixture, beating until smooth.  
  4. Spread batter into an 8" square baking pan that has been treated with baking spray.  Bake in a preheated 350* oven for about 20 minutes, until a skewer inserted in the center removes cleanly.  Remove from oven to wire rack to cool completely.
Frosting
  1. Place the butter, peanut butter, honey, salt and vanilla in the small bowl of a stand mixer fitted with the whisk attachment.  Beat until blended.  Reduce speed to low, gradually add the powdered sugar until incorporated.  Increase the speed, beating until smooth. 
  2. Spread onto cooled cake and sprinkle with chopped honey roasted peanuts, if desired.

  4. As much as I enjoy baking I love that these little cakes don't take long to bake. That frosting looks like the kind you're tempted to eat with a spoon. It looks really yummy!
