Grilled Shrimp Skewers with Tropical Fruit Salsa #BBQWeek

Scrumptious skewers of delicate, tender shrimp, sweet pineapple and crisp green bell pepper served up with a tropical salsa.  You will feel like you are on the beach in the Caribbean.

Grilled Shrimp Skewers

These skewers take more time to prep and assemble than they do to cook and they don't take very long to prep and assemble.

Tropical Fruit Salsa

A marinade of lime juice, olive oil and adobo seasoning does double duty being brushed onto the skewers before grilling and the rest being tossed with pineapple, mango, jalapeno and mint as a salsa to serve with the shrimp.

I served it up with a Royal Blend Rice Mixture that was ready in 20 minutes.  Dinner on the table in less than half an hour.  Life is good in the summertime.

Grilled Shrimp Skewers with Tropical Salsa

Grilled Shrimp Skewers with Tropical Salsa

Scrumptious skewers of delicate, tender shrimp, sweet pineapple and crisp green bell pepper served up with a tropical salsa. You will feel like you are on the beach in the Caribbean.

Ingredients

  • 1/2 fresh pineapple cut into chunks, divided
  • 12 Jumbo Shrimp, shelled and deveined
  • 1 green pepper, cut into chunks
  • Juice of 1 lime
  • 1 T. olive oil
  • 1/2 t. adobo seasoning
  • 1 mango, peeled and diced
  • 3 lg. mint leaves, finely chopped
  • 1/2 jalapeno, seed and minced
  • 3 large steel skewers

Instructions

  1. Thread the pineapple, green pepper and shrimp, alternating using 4 pieces of each onto 3 skewers.  Set aside
  2. Cut any remaining pineapple into smaller dice and combine with the mango, jalapeno and mint in a small bowl.
  3. Whisk together the lime juice, olive oil and adobo seasoning.  Use a pastry brush to coat the skewers.  Add remaining marinade to the mango mixture and toss to coat.
  4. Grill the skewers on a hot grill for 3 minutes per side.  Serve with the tropical salsa and rice, if desired.
