Sesame Ginger Noodles #FoodieExtravaganza

This amazingly easy and tasty dinner is perfect for those nights when you come home starving and have no idea what you are going to make.  You can use any vegetables that are available in your refrigerator and dinner is ready in less than half an hour.

Sesame Ginger Noodles

The nice thing about this dinner is how versatile it is.  You can use any vegetables you have in the refrigerator.  In this case I used onions, mushrooms, sweet peppers, and snow peas.  You can also use any pasta that you have on hand.  I always like to keep a package of rice noodles in the cupboard because they only take minutes to prepare.

This is one of my families favorite meals.  I often plan it on the weekly menu for Meatless Monday but they never complain if I am running on empty and make it because it's quick, easy and I didn't plan anything else.  I hope your family enjoys it as well.

Sesame Ginger Noodles

This amazingly easy and tasty dinner is perfect for those nights when you come home starving and have no idea what you are going to make. You can use any vegetables that are available in your refrigerator and dinner is ready in less than half an hour.

Ingredients

  • 1 (8 oz) pkg rice noodles, prepared per package directions
  • 1 t. sesame oil
  • 2 c. assorted fresh vegetables in bite size pieces
  • 1/3 c. water
  • 1/3 c. soy sauce
  • 1/4 c. pure maple syrup
  • 1/4 c. toasted sesame oil
  • 1 clove garlic, minced
  • 1 t. ginger paste
  • 1 1/2 t. cornstarch
  • toasted sesame seeds for garnish, if desired

Instructions

  1. While noodles are cooking, heat 1 teaspoon of sesame oil in a large skillet over med high heat.  Add the vegetables and stir fry until crisp tender, about 5 minutes.
  2. Whisk together the water, soy sauce, syrup, oil, garlic, ginger and corn starch.  Add to the vegetables.  Drain the noodles and add to the skillet tossing to coat.  Cook for about 5 minutes until sauce has thickened.
  3. Plate and sprinkle with toasted sesame seeds, if desired

  2. Oooh, nice sesame noodles, Wendy! I usually use fresh Chinese style noodles or linguine. I need to give the rice noodles a try.

  8. In love dishes like this - sesame noodles are a huge favorite of mine and my sister's. So flexible too - add in the veggies you have on hand mix / match protein if desired. Yum!
