Instant Pot Smoked Turkey and Navy Bean Soup #MultiCookerMonday

Using an Instant Pot for bean soup has become my new favorite thing about this small kitchen appliance.  No soaking, no precooking and perfectly prepared, soft, creamy beans every. single. time!  This navy bean soup is paired with smoked turkey and was an amazing way to use up my Thanksgiving leftovers.  I might smoke some turkey legs just so I can make this soup again.

Smoked Turkey

I smoked my turkey this Thanksgiving for the first time.  It turned out very well but, as many others, I think the best thing about Thanksgiving is the leftovers.  This year I used those leftovers to create an amazing soup in the instant pot.

I had a leftover thigh, leg and part of a wing.  I removed and discarded the skin prior to making this soup.  I used navy beans because that was what I had in my cupboard.  Every time I make a turkey I turn the leftovers into soup.  This may be my favorite version yet.

Instant Pot Smoked Turkey and Navy Bean Soup

Ingredients

  • 1 lb. dried navy beans
  • 1 T. canola oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 garlic cloves, minced
  • 6 c. turkey or chicken broth
  • 2 or 3 pieces of smoked turkey, I used a thigh, leg and wing
  • 1 1/2 t. dried Italian herb seasoning
  • 1 bay leaf
  • salt and pepper, to taste

Instructions

  1. Add oil to instant pot and press saute setting.  When it registers hot, add the onion, celery, carrots, and garlic, season with salt and pepper.  Cook until fragrant and onion is translucent, about 5 or 6 minutes.  Stir in the Italian herbs.  Add the beans and bay leaf.  Add the broth and place the turkey pieces to the pot.  
  2. Press cancel and seal the instant pot, closing the vent.  Set to the bean setting.  When cooking is complete allow the steam to release naturally.  When pressure is released, remove the lid and place the turkey pieces onto a cutting board, discard the bay leaf.  Remove any bones and  gristle.  Cut or shred turkey into bite size pieces and return to the soup.  Taste and season with additional salt and pepper, if needed.

  1. The smoked turkey sounds fabulous. I have some legs in the freezer, too. They are my bonus when I take apart a turkey for pieces/parts, getting a nice breast, grinding up the thighs, and saving the other parts for the smoker. I bet the stores mark down the frozen turkeys in just a few days. Just in time!

  5. I usually add ham to bean soup, but the thought of using smoked turkey instead made my mouth water, as I was reading your recipe.
