These little bites would be perfect as just brownies but adding a macerated cherry to each one makes them even more delicious and fun.

This recipe makes 36 brownie bites and they freeze very well so you can make them now and enjoy them throughout the season.

Chocolate Cherry Brownie Bites

Chocolate Cherry Brownie Bites

Bite size little brownies topped with a fun little cherry on top. Perfect addition to your cookie platter this Holiday Season.

Ingredients

  • 36 Frozen cherries, thawed
  • 1 T. sugar
  • 3/4 c. flour
  • 1 T. baking cocoa
  • 1/2 t. baking powder
  • 1/2 t. instant coffee
  • pinch of salt
  • 1 stick butter
  • 3 oz. chocolate chip (semi sweet)
  • 2/3 c. sugar
  • 2 eggs
  • 1 t. vanilla

Instructions

  1. Place the cherries in a small bowl.  Sprinkle with sugar and set aside.
  2. Whisk together the flour, cocoa, baking powder, coffee and salt.  Set aside.
  3. Place the chocolate and butter into a small bowl and microwave on high in 30 second increments, stirring after each, until melted and smooth.  Set aside.
  4. In large bowl of stand mixer, fitted with the paddle attachment beat the sugar, eggs and vanilla until thick, creamy and light yellow, about 4 minutes.
  5. Stir in the chocolate and flour mixtures.  
  6. Using a small cookie scoop (1 Tablespoon) divide the dough into 36 mini muffin cups containing paper liners.  
  7. Drain the cherries well and place one in the center of each brownie.  Bake in a preheated 350* oven for 18 minutes, until a toothpick inserted removes cleanly.
  8. Let cool completely on a wire rack before trying to remove paper liners.
