Apple Tea Brined Pork Tenderloin #FallFlavors

Apple Cider Tea

I used a sponsor gift from The Republic of Tea for the creation of this recipe.  This tea made the perfect brine for the pork.

This recipe does need to be started the day before so that the pork can brine overnight.  When you are ready to serve, however, the pork only takes minutes on the grill to reach a perfect 145*-160*.

Apple Tea Brined Pork Tenderloin

Apple Tea Brined Pork Tenderloin

This pork tenderloin marinated in Apple Cider Tea and then grilled to a perfect medium rare is sure to become one of your favorite fall recipes.

Ingredients:

  • 2 pork tenderloin, silverskin removed
  • 1 qt. water
  • 8 cups ice
  • 1 c. kosher salt
  • 1 c. brown sugar
  • 1 lg. carrot, peeled and chopped
  • 4 celery ribs, chopped
  • 1 sweet onion, chopped
  • 8 cloves garlic, minced
  • 6  Hot Apple Cider Tea Bags ( I used The Republic of Tea brand)

Instructions:

  1. Bring the water to a boil.  Add the salt, sugar, carrot, celery, onions and garlic.  Let cook for 5 minutes.  Remove from heat.  Add tea bags and let steep for 5 minutes longer.  Remove tea bags and allow to cool to room temperature.
  2. Pour mixture into a large container and add the ice.  Submerge the tenderloin in this mixture.  I divided the mixture between 2 freezer bags and place a tenderloin in each.  Cover and refrigerate overnight.
  3. Remove the tenderloins from the brine and pat dry.  Heat a grill to med high and cook the tenderloin for about 15 minutes, turning halfway through the cooking time until an internal temperature of 145-160* is reached. 
  4. Allow tenderloins to rest for 5 minutes before slicing and serving.
