Roasted Sunchokes, Potatoes and Mushrooms #FallFlavors

Sunchokes

I received a huge selection of wonderful produce from Melissa's  for this event.  Melissa's is one of my favorite sponsors.  I love opening that box of goodies and learning about new (to me) produce and figuring out what to make with them.

In this box I found a bag of Sunflower Chokes.  This vegetable comes from the root of the sunflower plant.  You may have heard them called Jerusalem Artichokes but they are not related to artichokes at all. They are also called Sunchokes for short. 

They are nutty and slightly sweet and roasting them brings out these flavors.  I also got two bags of Baby Dutch Yellow Potatoes that  I incorporated into this recipe.

I served this dish up as a side to my Apple Tea Brined Pork Tenderloin that I shared with you yesterday. It was a perfect accompaniment.  I roasted mine on my gas grill with the lid closed but you can make this in the oven during the colder fall months.

Roasted Sunchokes, Potatoes and Mushrooms

Roasted Sunchokes, Potatoes and Mushrooms

Creamy, golden potatoes, crunchy, nutty tasting sunchokes and earthy mushrooms tossed together with olive oil and herbs to make a delicious side dish for whatever entree you are serving up this fall.

Ingredients:

  • 1/2 lb. baby dutch potatoes (I used Melissa's)
  • 1/2 lb. sunchokes, peeled (I used Melissa's)
  • 8 oz. whole white mushrooms, halved if large
  • 2 T. olive oil
  • salt, pepper and Italian herb seasoning, to taste

Instructions:

  1. Wash and dry the potatoes and mushrooms.  Place in a large bowl with the peeled sunchokes, cutting as necessary so all vegetables are close to the same size.  
  2. Add the olive oil, salt, pepper and Italian Herbs, if using.  Toss the bowl a few times to coat all the vegetables.  
  3. Pour out onto a baking sheet, if using oven, or onto a vegetable grill pan, if using grill.  Roast in high heat (425*) for 20 minutes or until vegetables are tender.
