Crockpot Cheesy Potatoes #MultiCookerMonday

Who says you can't enjoy Cheesy Potatoes in the summertime?  One of my favorite ways to enjoy casseroles without turning on the oven is to turn to my slow cooker.

It's time for Multi-Cooker Monday........
Sue of Palatable Pastime invites us on the third Monday of each month to share a recipe that uses one of our small kitchen appliances.  I have a ton of them....crock pots, instant pots, rice cookers, vitamix blender, smart oven that is an air fryer and dehydrator, kitchen aid mixer with all the attachments for making my own pasta, grinding meat or making sausage. My cupboards and counters are full and I use at least one of these nearly everytime I cook.

We were having an outdoor, social distancing gathering for the Teen's birthday last month and I put a Beef Tenderloin on the rotisserie for dinner.  The teen is not a meat lover but she adores cheesy potatoes so I decided to make those so that she would get some protein during the meal.

It was the end of June and the weather was hot, hot, hot so I did not want to turn on my oven.  Instead I pulled out my slow cooker and by the time I was ready to serve dinner they were hot and bubbly with some nice browned edges.

So the next time you get a hankering for cheesy potatoes and don't want to turn on your oven or don't have extra oven space, worry not.  Just grab your slow cooker and you are good to go.

Crockpot Cheesy Potatoes

The same deliciousness of your favorite Cheesy Potato casserole without turning on your oven. Perfect for your next hot weather get together with whatever you're grilling up.
Prep time: 10 MCook time: 6 hourTotal time: 6 H & 10 M

Ingredients:

  • 1 pkg frozen southern cut potatoes, thawed
  • 1 small onion, diced
  • 1 can cream soup (I used cream of chicken today)
  • 1 c. sour cream
  • 1 c. milk
  • 2 c. shredded colby jack cheese
  • salt and pepper to taste

Instructions:

  1. Combine all ingredients in a slow cooker.  Cook on low for 6 hrs or on high for 4 hrs.

  1. I love my crockpot, it gets used at least twice a week in my house. Your potatoes look like they turned out amazing. I love the way the edges get brown like that. it's my favorite part to eat.
