Sourdough Pretzel Bites #BBQWeek

The next time you are having friends over for a BBQ, put out a tray of these pretzel bites to share along with cocktails while the main course is on the grill.

I don't know about you but when I entertain (yes, that was a thing we did not so long ago, and hope to be able to do again one day), I like to have appetizers or snacks out when guests arrive to hold them until dinner is ready.  Maybe some nuts, cheese and crackers or spinach dip with pitas.  Or how about these little pretzel nuggets with different flavors of mustard for dipping.  Now we're talking!!

Being made with sourdough starter the dough only needs to rise for an hour before you roll them into ropes and cut them into nuggets.   After another 20 minutes of rest they are ready for a baking soda bath and into the oven they go for  a mere 10 minutes.

They are ready to be served immediately and are equally as good at room temperature if you want to make them ahead of time.  Frank pops them in as they are.  The Teen and I like to dip ours in mustard.  When serving to guests, I like to offer an assortment of mustards  for dipping.

These nuggets would also be perfect with melted nacho cheese if you were serving them after dinner while playing cards or a board game.   I can't wait to have family and friends over again!!!!




Cheesy Sourdough Pretzel Nuggets

Cheesy Sourdough Pretzel Nuggets

Yield: 4-6 appetizer servings

These soft, savory, pretzel nuggets laced with shredded cheese are a perfect treat to snack on with pre-dinner cocktails or wine.

Ingredients:

  • 1/2 c. sourdough starter
  • 3/4- 1 1/2 c. flour
  • 1 T. butter, room temperature
  • 1 c. shredded Colby Jack cheese
  • 6 T. baking soda
  • 6 c. water
  • 1 egg white beaten with 1 T. water
  • kosher salt for sprinkling

Instructions:

  1. In large bowl of stand mixer fitted with the paddle attachment combine the sourdough starter, 1/2 cup of the flour and the butter.  Turn the speed to low and gradually add flour, 1/4 cup at a time until a dough is formed. 
  2. Switch to the dough hook and knead on medium speed, adding additional flour, a Tablespoon at a time until a smooth, elastic ball is formed.  This should take about 5 minutes.
  3. Place the dough in a warm, draft free spot until nearly doubled, this should take about an hour.
  4. Punch down the dough, add the cheddar cheese and knead lightly until incorporated.  Divide the dough into 6 equal pieces.  Roll each piece into a rope and cut each rope into nuggets.  Place on a baking sheet that has been lined with parchment or a silicone mat, cover and let rest for another 20 minutes.
  5. Meanwhile bring the water and baking soda to a boil.  When the water and nuggets are ready, drop them into the water in batches until they rise to the top.  Using a slotted spoon or spider remove the nuggets from the water and place back onto the baking sheet.  
  6. Brush each nugget with the egg wash and sprinkle with kosher salt.  Bake in a preheated 400* oven for about 10 minutes until golden brown.
