Herb Baked Eggs inspired by Midnight in Paris #FoodnFlix

These delicious eggs baked in cream and butter and sprinkled with fresh herbs make a perfect breakfast or brunch dish.

I was inspired to make this dish after watching Midnight in Paris for Food n Flix this month.....

Midnight in Paris

I had never seen this Woody Allen film that debuted in 2011.  It stars Owen Wilson as Gil, a screenwriter who takes his fiancee to Paris. 

Gil is a romantic at heart and thinks that bliss would have been living in Paris during the 1920's.  His fiancee is more pragmatic and has total disdain for Gil's romantacism.  They have a falling out and Gil takes to walking the streets alone dreaming of how life may have been.

On one of the excursions he finds himself picked up at the stroke of midnight and taken back in time to enjoy the night with the Jazz age era's authors, actresses and playwrights.  

This is a fun filled movie that I don't know how I missed for all these years.  There is not a lot of food in this movie but there are a lot of cocktails and wine.

There are a lot of restaurant scenes but not a lot of shots of food.  I pulled out my Barefoot in Paris Cookbook written by Ina Garten and decided to make these Herb Baked Eggs for brunch one morning.

I have several of Garten's cookbooks.  I like them because the recipes are simple, easy to follow and always seem to turn out very well.  These eggs are no exception.

I made a sourdough baguette to serve with this egg dish.  I will be sharing that recipe with you another time.  It was the perfect accompaniment for dipping into these wonderful, gooey, herb flavored eggs.

Herb Baked Eggs

Herb Baked Eggs

These delicious eggs baked in cream and butter and sprinkled with fresh herbs make a perfect breakfast or brunch dish.
Prep time: 5 MCook time: 12 MTotal time: 17 M

Ingredients:

  • 1 clove garlic, minced
  • leaves of 1 sprig thyme
  • 1 T. chopped parsley leaves
  • 1 T. grated Parmesan cheese
  • 4 eggs
  • 2 T. heavy cream
  • 1 T. unsalted butter
  • salt and pepper to taste

Instructions:

  1. Combine the garlic, thyme, parsley and Parmesan cheese.  Set aside.
  2. Crack the eggs, placing two each into two small bowls being careful not to break the yolks.  Set aside.
  3. Place two ramekins onto a baking sheet.  Add a 1 Tablespoon of cream and 1/2 Tablespoon of butter into each ramekin.  Place under a broiler for 3-4 minutes until butter is melted and mixture is hot and bubbly.   Pour two eggs into each of the ramekins being careful not to break the yolks.  Sprinkle each with half of the herb/cheese mixture and place back under the broiler for another 5 minutes or so, until the whites are nearly cooked.  
  4. Remove from broiler and let rest for a minute before serving.  You can place slices of baguette under the broiler during this time to serve for dipping if you wish.
