During this Stay Home/Stay Safe mandate I, like many of you, have been trying to limit my visits to the grocer and live off what is available in my freezer, pantry and refrigerator.  I am very fortunate to buy my meat in bulk from one of our local farmers so my freezer is jamb packed.

I had pulled out a chuck roast and cooked it up in the Instant Pot for dinner one night.  I didn't make gravy to go with this roast this time.  We like our chuck roast with ketchup.  I did save the cooking liquid though because I knew I would be making something with the leftovers.

We didn't have a ton of meat left but we had enough to make this wonderful, soothing pot of soup.  I think we can all use a little comfort food during this pandemic.

I dug into the refrigerator and found a handful of green beans, carrots, celery and a piece of onion.  I also found some fresh thyme and oregano in there so I used that to flavor the soup.  You can use whatever you find in your refrigerator and your favorite dried herbs and spices would work great.  I had egg noodles in my pantry but you can use any pasta you have on hand.

If you like gravy with your roast, you can use whatever is left over or just use beef stock if you have it in your cupboard.  If you don't have leftover cooking liquid, gravy or beef stock you can use water and add a couple of cubes of beef bouillon.  

The whole idea around this bowl of soup is to use whatever you have on hand so that you can Stay Home/ Stay Safe and Stay Well.

Ingredients:

  • 1-2 c. diced leftover roast beef
  • leftover cooking liquid from roast beef + broth or water to equal 5 cups
  • 1-2 c. fresh vegetables of choice, diced , sliced or cut into bite size pieces
  • 1 T. olive oil, cooking oil or butter
  • salt and pepper, to taste
  • 1 sprig fresh thyme or 1/2 t. dried thyme
  • 1 sprig fresh oregano or 1/2 t. dried oregano
  • 8 oz. pasta of choice

Instructions:

How to cook Leftover Beef Noodle Soup

  1. Heat the oil or butter in a large pot over med high heat.  Add the vegetables, season with salt and pepper and cook until slightly softened.  Add the liquid that you are using (if using water, add a couple of bouillon cubes), thyme and oregano.   Bring to a boil and let cook until vegetables are tender,. Stir in the beef and pasta.  Cook until pasta is to your preferred tenderness
