Creamy Mac and Cheese with Corn #NationalSlowCookerMonth

This creamy mac and cheese made the perfect side dish to one of my holiday meals.  Using the slow cooker allowed me to use my hands on time for the rest of the meal.

I served this dish up at a family dinner during the Christmas Season.  I have a son in law who doesn't eat pork and a Teen that doesn't care for meat so I wanted a hearty side dish to go along with my Crown Roast, Stuffing, and Ribbons of Brussels Sprouts.


I settled upon this Creamy Mac and Cheese with Corn that I found in an issue of Cuisine at Home.  I adapted it to make it in the slow cooker so that I could concentrate on the rest of the meal.  It was a huge hit.

Creamy Mac & Cheese with Corn

Creamy Mac & Cheese with Corn

This creamy, cheesy macaroni and cheese with corn is a perfect side dish to a large dinner party or to bring to a pot luck.

ingredients:

  • 1 lb. elbow macaroni
  • 3 c. frozen corn kernels
  • 4 T. butter
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/4 c. flour
  • 5 c. full fat milk
  • 8 oz. shredded cheddar cheese
  • 8 oz. shredded American cheese
  • 1 T. dijon mustard
  • salt and pepper, to taste

instructions:

How to cook Creamy Mac & Cheese with Corn

  1. Melt the butter in a large skillet, add the garlic and shallots, stir and cook until softened and aromatic.  Stir in the flour and cook until flour is nutty smelling.  Slowly whisk in the milk until flour mixture is incorporated.
  2. Transfer to the crock of a slow cooker.  Stir in both cheeses, the mustard, the pasta and the corn.  Season with salt and pepper.  Cover and turn to low.  Cook for 3 hrs, stirring halfway through cooking time, until melted, creamy and the pasta is tender.

  1. I tried cooking slow cooker pasta for the first time this month and was amazed that it actually worked! I had thought the pasta shapes would just go mushy with such a long cook time, but they held up well

    1. Yes, as long as you use wheat pasta. I haven't tried it with rice pasta but the chickpea pasta needs a much shorter cook time or it turns to mush.

  3. I have never tried cooking pasta in the slow cooker. This looks delicious! And if your teen loved it then that tells me it must have been really good

    1. Well she loved it more than I Paula but then I am not a huge corn fan. It reminded her of my corn casserole which she also loves.
