Evelyne of CultureEatz invited us to share a Christmas or Holiday recipe from around the world today.  It could be any dish we wanted, savory or sweet.  I decided to honor my maternal grandmother who came from Czechoslovakia as a young girl.  I made up this Bohemian Potato Salad and served it at our Annual Santa Dinner along with Sliced Ham.  It was a huge hit.


This hearty salad along with broccoli salad, cole slaw and sandwich fixins' for the ham was a perfect lunch to feed all these hungry kids and their parents and grandparents.  Great, Great Grandma was smiling down upon her ongoing legacy.

Bohemian Potato Salad (Bramborový Salát)

Old Fashioned Eastern European potato salad, hearty and full of vegetables, makes a perfect dish to bring to your Christmas Potluck.

ingredients:

  • 5 lbs. russet potatoes, scrubbed and quartered
  • 6 eggs
  • 2 (15 oz) cans veg-all, drained
  • 6 lg. Kosher Dills
  • 1 onion
  • juice of 1 lemon
  • 1 c. Miracle Whip
  • 2 T. Dijon Mustard
  • salt and pepper, to taste

How to cook Bohemian Potato Salad (Bramborový Salát)

  1. Place potatoes into a large pot and cover with cold water.  Bring to a boil, reduce to a gentle boil and cook until fork tender, about 20-25 minutes.  When about 10 minutes of cooking time is left for the potatoes add the eggs to the boiling water.
  2. Remove the eggs with a slotted spoon into a bowl of cold water.  Drain the potatoes into a colander and allow to cool.  When potatoes are cool, peel off the skins and dice into bite size chunks.  Peel the eggs and dice into the potatoes. 
  3. Place the onion and pickles into a food processor and pulse until minced.  Add to the potatoes.  Drain the vegetables and add to the bowl with the potatoes.
  4. Whisk together the Miracle Whip (or Mayo), mustard and lemon juice.  Season with salt and pepper.  Add to the potato mixture and gently toss until completely coated.   Refrigerate overnight to allow the flavors to meld.

  2. Don't laugh, but I have NO idea what veg-all is. Need to look that one up. But I love all potato salads, so I am certain this would be a hit.

    1. It is canned mixed vegetables, all the same mixed vegetables you find in the frozen section but canned.
