Roasted Brussels Sprouts, Apples and Onions #HolidaySideDishes #WorldVeganDay

This wonderful side dish couldn't be easier and you will be thrilled with the great results.  Earthy Brussels Sprouts tossed with Sweet Onion and Apples, then roasted until tender and browned.

I love eating the flavors of the season and this recipe is perfect for the Fall and Winter months.  It is also naturally Vegan Friendly which is perfect because Valentina of The Baking Fairy invited us to join her in celebrating World Vegan Day.


Even though we are not Vegan in this household, many of the dishes we love are naturally vegan.  I try to celebrate Meatless Monday each week and often sneak other meatless meals into the menu.  This is made easier now that we have the Teen.  Though not vegan, she is not a meat lover.  However she loves vegetables and was crazy about this dish.

Roasted Brussels Sprouts with Apples and Onions

This wonderful side dish couldn't be easier and you will be thrilled with the great results. Earthy Brussels Sprouts tossed with Sweet Onion and Apples, then roasted until tender and browned.

ingredients:

  • 7 Brussels Sprouts, cleaned and quartered
  • 1.2 small, sweet onion, sliced
  • 1/2 of an apple, cored and large diced
  • 1 T. olive oil
  • salt and pepper to taste

instructions:

How to cook Roasted Brussels Sprouts with Apples and Onions

  1. Toss the Brussels sprouts, apples and onion with the olive oil, salt and pepper.
  2. Place onto a baking sheet in a single layer and roast in a preheated 400* oven for 15-20 minutes, until Brussels sprouts are tender.

  7. I dont like brussel sprouts as is, but roasting them along with apples and onion is a good idea. I would love to try this.
