Sauteed Chayote Squash with Onions and Bacon #HolidaySideDish

Quick and easy to make, this Chayote squash flavored with bacon and onion makes a deliciously different side dish to your meal.

Today is the second installment of Holiday Side Dishes........

Heather of Hezzi-D's Books and Cooks invited us to join her this week in sharing recipes for Holiday Sides.  We posted on Monday,  and I shared these individual Mac & Cheese Muffins.  Today I am back with this tasty side dish and Friday I am sharing another vegetable side.  This gives you plenty of time to plan your Holiday Menus.

Let's take a look at today's recipes........

Are you familiar with Chayote Squash?  I had never heard of it until last year when I partook of an event called Freaky Fruits Friday.  The participants received product from Melissa's Produce to use in the creation of recipes and included in the basket was Chayote Squash.  I had to do some research and then I shared a recipe for Seafood Stuffed Chayote Squash.  It was delicious and I was hooked.

Chayote Squash is part of the gourd family and is very mild tasting, much like summer squash but firmer.  This means it lends itself well to be married with other flavors, in this case onions and bacon.....BACON!!

I found Chayote Squash at my International Marketplace and was excited to try this new recipe.  I'm so glad I did and you will be too.  Please stop by tomorrow in between passing out treats to the beggars and take a look at my upcoming week and the Weekly Menu.  Then on Friday stop by for the final edition of Holiday Side Dishes.
