Grilled Asian Mahi Mahi with Kiwi Pineapple Salsa #ImprovCookingChallenge

 Improv Cooking Challenge is a fun little group led by Nichole of Cookaholic Wife.  Each month the members are given two ingredients and choose a recipe that showcases said ingredients.  The possibilities are endless!  


This month's ingredients are Kiwi and Pineapple.  Let's take a look at what creations the others are serving up.......

Improv Cooking Challenge
    That is a pretty great looking lineup.  I'm anxious to start browsing and coming up with some fresh ideas for these tropical fruits.


    Many people think that kiwi is native to Australia but, in actuality, it was brought to Australia from China.  Cilantro, which we now associate mostly with Mexican food also originated in China and is often called Chinese Parsley.  

    So once I created this salsa I wanted to pair it with Asian Flavors.  I had some Mahi Mahi in the freezer that I knew would be a perfect match to this salsa.  I marinated it for a few minutes in Teriyaki Sauce before grilling and basting with the additional Teriyaki.


    I did not pair this dish with sake but with a Vinho Verde from Portugal.  Portugal and China have a long history.  In fact, Portugal held the Macau region of China from 1557 until 1999.  This wine was a perfect match for the Asian/Tropical fusion of this American dinner that I rounded out with grilled redskin potatoes and grilled asparagus.

    Grilled Asian Mahi Mahi with Kiwi Pineapple Salsa

    Meaty, tender Mahi Mahi fillet slathered in Asian Flavors, grilled to perfection and served with a sweet tropical Kiwi Pineapple Salsa.

    ingredients:

    • 4 (6-8 oz) pieces Mahi Mahi Fillet
    • 1/2 c. Teriyaki Sauce + more for basting
    • 1/2 fresh pineapple, peeled, cored and cut into chunks
    • 3 Kiwi, peeled and cut into chunks
    • juice and zest of 1 lime
    • salt and pepper, to taste
    • leaves from 6-8 sprigs cilantro, coarsely chopped

    instructions:

    How to cook Grilled Asian Mahi Mahi with Kiwi Pineapple Salsa

    1. Massage the Teriyaki Sauce into the Mahi Mahi Fillets.  Place on a platter and refrigerate for 15-20 minutes while the grill gets hot.
    2. While Mahi Mahi is marinating, combine the kiwi, pineapple, lime juice and zest and cilantro in a small bowl.  Season with salt and pepper. 
    3. Grill the Mahi Mahi over hot heat for about 3-5 minutes per side, depending on the thickness of the fillets, basting with Teriyaki sauce before and after turning.
    4. Serve topped with the Salsa.
