I found this recipe for these Strawberry Shortcake Bars in Cuisine at Home.  When this month's theme was chosen I knew that I was going to make it.  I am so glad that I did.


You start with a butter cookie crust to which you have folded in fresh strawberries and white chocolate chips.


Press half the cookie mixture into a baking pan and top with strawberry preserves.


Top with the remaining cookie mixture and bake to a beautiful golden brown.


While the bars are baking you make a quick glaze in which you coat additional fresh strawberries.  When ready to eat just spoon the fresh berries on top and add a dollop of freshly whipped cream.

Strawberry Shortcake Bars

ingredients:

Cookie Bars
  • 2 c. flour
  • 1/4 c. sugar
  • 1 T. baking powder
  • pinch of salt
  • 1 stick cold butter, cut into 8 T. portions
  • 1 c. diced fresh strawberries
  • 1/2 c. white chocolate chips
  • 1/2 c. heavy cream, divided
  • 1 egg
  • 1/2 t. vanilla
  • 3/4 c. strawberry jam or preserves
Topping
  • 1 qt.  fresh strawberries, divided
  • 1/3 c. sugar
  • 1 T. cornstarch
  • 1/4 c. water
  • pinch of salt
  • 1 c. heavy cream, whipped

How to cook Strawberry Shortcake Bars

Cookie Bars
  1. Place the flour, sugar, baking powder, salt and butter into the bowl of a food processor and pulse until pea sized crumbs form.  Pour into a bowl and fold in the strawberries and white chocolate chips.
  2. Divide mixture in half and press into the bottom of a 9" square baking pan that has been treated with baking spray.
  3. Spread the jam over the cookie layer and then press the remaining cookie dough over the jam.  
  4. Bake in a preheated 375* oven for 35-40 minutes, until golden brown.  Remove to a cooling rack to cool completely. 
Topping
  1. Hull and halve or quarter the strawberries.  Place 3/4 c. of the strawberries into a food processor and puree until smooth.  
  2. Place the sugar and cornstarch in a sauce pan over med high heat.  Stir in the puree, salt and water. Bring to a boil and cook until thick, stirring constantly. 
  3. Remove from heat and allow to cool slightly.  Pour onto the remaining strawberries and toss to coat completely.  
  4. Cut the bars into 12 equal squares.  Place a square onto each plate, top with 1/12th of the glazed strawberries and a dollop of whipped cream
