Spiced Beef Kabobs #FoodieExtravaganza

These delicious sirloin kabobs spiced with ground coriander and served with a lemony mint yogurt sauce are the perfect addition to your next appetizer buffet.

I do a lot of entertaining during the summer months and often I will just serve tapas which translates to small plate or, here in the USA, appetizers.  Traditionally Tapas would be Spanish finger foods however, as with most fusion foods, it now is acceptable to include any appetizers on a Tapas Table.

Juli of Pandemonium Noshery asked us the members of Foodie Extravaganza to help her celebrate today by bringing our favorite tapas or small plate to the party.  Let's see what the others have cooked up for us.



      I like this recipe because it can be made up ahead of time and then when guests arrive they take only minutes on the grill.  They are ready before the cocktails are finished being served.

      The recipe, as written, serves four as a small plate or 2 as a main course.  When served as a tapas, I often serve with mini pitas.  When I serve these for dinner, I warm large pitas and we stuff them and eat them as sandwiches.  YUM.

      Spiced Beef Kabobs

      These delicious sirloin kabobs spiced with ground coriander and served with a lemony mint yogurt sauce are the perfect addition to your next appetizer buffet.

      ingredients:

      • 1 (1-2 lb) sirloin steak, cut into 1-2" pieces
      • 4 mini peppers, cored and halved
      • 8 (1") chunks of Vidalia onion
      • 1 T. olive oil
      • 2 t. ground coriander
      • salt and pepper, to taste
      • 1 (5 oz) container plain Greek yogurt
      • 5-6 mint leaves, coarsely chopped
      • juice of 1/2 a lemon

      instructions:

      How to cook Spiced Beef Kabobs

      1. Put the steak, peppers and onions in a bowl.  Add olive oil, coriander, salt and pepper.  Toss to coat.  
      2. In a small bowl, whisk together the yogurt, mint and lemon juice.  Set aside.
      3. Thread one pepper, one piece of steak, one onion chunk and another piece of steak onto each of 8 small wooden skewers.
      4. Grill over high heat for about 3-4 minutes per side.   Serve warm and pass the yogurt dip.
