PBJ Banana Bread #NationalPB&JDay

This moist, tender, luscious bread is so rich and tasty you will feel like you are enjoying dessert for breakfast.  But not to worry, it is chock full of healthy bananas, protein rich peanut butter and includes whole wheat flour for added nutrients and fiber.

I don't know about you but I adore PBJ.  This love affair started when I was a wee child and has stayed strong for over 50 years.  I was thrilled when Katie of Kate's Recipe Box invited us to join her in this celebration.

I have shared many pbj recipes over the years....here are some of my favorites to celebrate this national food holiday....


This PBJ Cake is a fun presentation.  Bake the cake in a loaf pan, spread on a layer of peanut butter frosting and raspberry jam spread, top with another "bread" slice and serve.



This Asian take on PBJ is fun too.  Steamed buns filled with peanut butter and served with a jam dipping sauce.


For a quick, healthy breakfast try this PBJ Smoothie.

But if you have more time bake up this amazing bread that I am sharing today.  If you don't have time in the morning, bake it up the night before.  Like all banana bread recipes it is better the next day anyway and this will save you time during the busy mornings.


Mix together the batter for the banana peanut butter bread.  Spread half into a loaf pan, add dollops of your favorite jam and swirl it through.  Top with the remaining batter and repeat the swirling of jam.



It's ready to go into the oven.  It will take about an hour to bake.  This is going to become one of my favorites as well.  I'm anxious to try some of these PBJ recipes being shared so that I have a new list of fun recipes to love.

PBJ Banana Bread

This moist, tender, luscious bread is so rich and tasty you will feel like you are enjoying dessert for breakfast. But not to worry, it is chock full of healthy bananas, protein rich peanut butter and includes whole wheat flour for added nutrients and fiber.

ingredients:

  • 1 c. whole wheat white flour
  • 1 c. all purpose flour
  • 1 1/2 t. baking powder
  • 1/2 t. baking soda
  • pinch of salt
  • 2 eggs
  • 1 ripe bananas, mashed
  • 1 c. brown sugar
  • 1/2 c. extra crunchy peanut butter
  • 1/2 c. jam (I used strawberry)

instructions:

  1. In large bowl of stand mixer, fitted with paddle attachment, cream together the eggs, bananas, brown sugar, peanut butter and oil.  
  2. Combine the flours, baking powder, baking soda and salt.  Turn stand mixer speed to low and gradually add the dry mixture to the wet mixture until incorporated.  Increase speed to medium and mix until combined.
  3. Spread half the batter into a loaf pan that has been treated with baking spray.  Add 1/4 cup of the jam in dollops over the batter.  Using a butter knife, swirl the jam into the batter.  Repeat with remaining batter and jam.
  4. Bake in a preheated 350* oven for 1 hour, until a skewer inserted removes cleanly. Allow to cool in the pan on a wire rack for 10 minutes.  Turn out of the pan onto the wire rack and cool completely.

  2. The only way banana bread could be better is by adding peanut butter, and then jelly too? Yum!

  3. I've made peanut butter banana bread before, but swirling in some jelly puts it over the top! So good!
