Overnight Steel Cut Oats #FantasticalFoodFight

Chewy yet creamy this overnight oatmeal made with steel cut oats is a nutritious start to the day that will keep you energized until lunchtime.

When I went into the pantry I saw that I only had steel cut oats.  A quick google search showed me that overnight oats can be made with steel cut oats.  I found this recipe by Well Plated.  I adapted it to make the oats I am sharing with you today.

I can't wait to try some of these amazing sounding recipes, especially now that I have finally jumped onto the overnight oats train.


Full disclosure?  I had to let my steel cut oats soak for 2 nights to get a texture that appealed to me.  This recipe will last in the refrigerator for up to a week and each day it gets creamier and softer but keeps that chewy goodness.  Let yours soak for only one night if you like a firmer texture.

Overnight Steel Cut Oats

prep time: 10 minscook time: total time: 10 mins
Chewy yet creamy this overnight oatmeal made with steel cut oats is a nutritious start to the day that will keep you energized until lunchtime.

ingredients:


  • 1 3/4 c.  milk 
    2 T. honey
    2 T. extra crunchy peanut butter 
    1 c. steel cut oats
    pinch of salt
    1/2 t. cinnamon
    peeled and diced apple, if desired

instructions:


  1. In a large bowl, whisk together the milk, peanut butter and honey until completely incorporated.  Stir in the oats, salt and cinnamon.  Cover and place in the refrigerator overnight or for up to one week.  

    When ready to serve,  divide into 5 servings and top with diced apple pieces, if desired.

  2. I love the apple and peanut butter flavors... steel cut can take so much time to soak in the liquid, I always prefer rolled oats... :)
