Smoked Salmon Roll-ups #FishFridayFoodies #FoodnFlix

A delicious, elegant, yet simple appetizer just in time for the Holiday season.

These Salmon Roll-ups were inspired by the movie, Love Actually, and fit in perfectly with this month's theme for Fish Friday Foodies.........

Our Fish Friday Foodies group is being hosted this month by my friend, Sue of  Palatable Pastime. Sue chose the timely theme, Seafood Recipes for Entertaining.

The possibilities are endless and I am very anxious to see what the others are sharing.  Let's take a look.

Fish Friday Foodies is a group that I started in January of 2016 in an attempt to add more fish/seafood into my weekly menus.  We are still going strong and we love welcoming new bloggers to our group.   All bloggers are welcome to join in the fun as we prepare a dish based on a theme and post photos and recipes on the third Friday of each month.  If you want to participate just leave a message with your blog name in the comments below.

The recipe that I'm sharing was inspired by another group to which I belong called FoodnFlix.  This fun group is led by Heather of All Roads Lead to the Kitchen.  Each month we watch a movie and then share a recipe that is inspired by the movie.  All members take turns each month, choosing a film and then gathering the roundup at the end of the month to share with the others.  It is one of my favorite groups.  You can learn how to join in the fun here.

Food 'n Flix

This month our host is Debra of Eliot's Eats.  Debra chose the adult Holiday movie, Love Actually.  I had never seen this movie before but I love Christmas movies, comedies and love stories.  I prefer Holiday movies that I can watch with my toddler and teen.  I wouldn't have been comfortable with either of them watching this movie.  You can learn more by reading Debra's announcement post.

This film has a slew of stars and is all about relationships.  The joys they bring, the sorrows they cause, the complications they bring.  There are 9 intertwined stories and I think everyone will find at least one to which they can relate.  This will not become a yearly movie that I watch as I do many other holiday films but I am glad that I watched it this year.

There was not a lot of food in this movie however at the very beginning we see the character played by Colin Firth attempt to pick up a girl by starting a conversation about how bad the appetizers were that were being passed at a Christmas party.  It kind of backfires when the girl is the caterer.

That made me laugh and it also made me want to make a Holiday appetizer with this month's Fish Friday theme.

So I made these easy, peasy roll-ups and took them to a Christmas party that I was attending.  I hope none of the guys tried to pick up any girls with a convo about how terrible they were but I would love if they tried to pick up a girl with a conversation about how delicious they were.

Smoked Salmon Roll-ups

A delicious, elegant, yet simple appetizer just in time for the Holiday season.
prep time: 20 minscook time: total time: 20 mins

ingredients

1 (8 oz) pkg. whipped cream cheese, room temperature
Fronds from two stems dill weed, finely chopped
2 T. minced red onion
2 T. minced capers
Juice and zest of 1/4 lg. lemon
1/2 t. caper juice
salt and pepper to taste
1 lb. cold smoked, pastrami style, salmon, in thin slices

instructions

Combine the cream cheese, dill weed, red onion, capers, lemon juice and zest and caper juice in a small bowl.

Place approx. 1 Tablespoon of cream cheese spread onto each slice of smoked salmon and roll into a pinwheel.  Cut each pinwheel into halves or thirds, depending on the size of the slice of salmon, to make equal, bite sized portions.

Place onto a serving platter and chill for at least 1 hour.  Sprinkle with additional dill fronds before serving, if desired.

  8. That's one of the scenes I thought about too - the appetizers. Nice choice! It's not a realistic movie in the way of relationships but I think it's amusing. I love Jamie!
