Baked Potato Soup in the Crockpot #SoupSaturdaySwappers

Creamy and flavorful potato soup simmers all day long in the crockpot.  You come home to a delicious smelling house and dinner is on the table before you know it.  Topped with all the things that make a perfect baked potato.....cheese, sour cream and bacon, this soup is a winner.

Our host for this month's Soup Saturday Swappers is Sid of Sid's Sea Palm Cooking.  She invited us all to make a soup that contained potatoes of some sort.  Baked, mashed, redskins, russets, sweet potatoes.....it didn't matter as long as they played a starring role.

This soup is easy, peasy.  The hardest thing about it is peeling the potatoes and chopping the onion.  You put those in the crock of a slow cooker along with some chopped celery, minced garlic, and chicken broth.  Season with salt and pepper and walk away for a few hours.

When ready to serve, use a potato masher or immersion blender to break up some of the potatoes.  Stir in some cream and you are ready to serve.


Pass around all the toppings that you love to put on your baked potatoes.  Crumbled bacon, shredded cheese, sour cream, chives, green onions.....the options are limited only to your imagination.  I chose bacon, sour cream and cheese to top my soup.

Baked Potato Soup in a Crockpot

Creamy and flavorful potato soup simmers all day long in the crockpot. You come home to a delicious smelling house and dinner is on the table before you know it. Topped with all the things that make a perfect baked potato.....cheese, sour cream and bacon, this soup is a winner.

ingredients:

5 small to medium russet potatoes, peeled and diced
1 small onion, chopped
3 cloves garlic, minced
1 stalk celery, diced
salt and pepper, to taste
1 c. heavy cream
sour cream, shredded cheese, crumbled bacon for garnish, if desired

instructions:

Place the potatoes, onion, garlic, chicken broth, salt and pepper in the crock of a slow cooker.  Cover and cook on high for 3-4 hrs or low for 7-8 hrs.  When potatoes are tender use an immersion blender or potato masher to break up and puree about half of the potatoes.  Stir in the cream.  Serve garnished with bacon, cheese and sour cream, if desired.
