Salmon Burgers to say Farewell to #CrazyIngredientChallenge #FishFridayFoodies

Tender flakes of salmon mixed with panko and egg, shaped into patties and cooked to perfection on a grill.  Served up with lettuce, tomato and a dollop of Lime/Caper Mayo, these make for the perfect Fish Friday barbecue.

I love Fish Friday Foodies, a little group that I started to help me incorporate more fish and seafood recipes into my menus.  We have a great group of bloggers.  This month my friend, Sneha of Sneha's Recipe, is hosting and has chosen the theme patties.

Sneha invited us to form any kind of fish or seafood into a patty and bake, broil, fry, grill......just cook it LOL.  If you are a blogger interested in joining Fish Friday Foodies, you can let me know in the comments below or by email at wendyklik1517@gmail.com and I will be happy to add you to the group.

There is a little bit of sadness in today's post too, though.  You see, another group to which I have belonged is having it's final event this month.  Crazy Ingredient Challenge was a great idea spearheaded by Kelly of Passion Kneaded and Lori of Lori's Culinary Creations.

It started off gangbusters and we had a lot of fun but for the past few months it has dwindled to only a few of us joining in to create a recipe that must contain the 2 ingredients chosen for the month.  This, final event, has us using capers and limes.  I used those ingredients to create a sauce for these delicious salmon burgers.

Before I share my recipe, lets look at what other fish/seafood patties were made

And what we made up using Capers and Limes

Salmon Burgers with Caper Lime Sauce

prep time: 20 minscook time: 6 minstotal time: 26 mins
Tender flakes of salmon mixed with panko and egg, shaped into patties and cooked to perfection on a grill. Served up with lettuce, tomato and a dollop of Lime/Caper Mayo, these make for the perfect Fish Friday barbecue.

ingredients:

1 c. Miracle Whip
juice of half a lime
zest of half a lime
1 T. capers
1 1/2 lbs. salmon fillets, skinned and cut into large dice
2 T. Dijon Mustard
3 green onions, white and light green parts, finely chopped
2 T. chopped Italian Parsley
1/2 c. Panko Bread Crumbs
salt and pepper to taste
olive oil
8 hamburger buns
8 lettuce leaves
8 tomato slices

instructions:

Whisk together the Miracle Whip, capers, lime juice and lime zest in a small bowl.  Refrigerate until burgers are ready to be dressed.

Place the Salmon into a large bowl, add the mustard, parsley, green onions, bread crumbs, salt and pepper and gently combine with clean hands.  Divide into 8 equal portions and pat into burgers.  Place onto a baking sheet and brush on both sides with olive oil.

Heat the grill to medium heat and cook the salmon patties to desired temperature, about 3 minutes per side if you want medium.

Place a patty onto each bun and top with a dollop of the lime/caper sauce, a lettuce leaf and a tomato slice.
